Terry's Texas Pinto Beans

This is my new favorite bean recipe. Simple and delicious! Because I don't like spicy food, I always leave out the jalapeño pepper. The first time I made it, I substituted regular salsa, but have also made it with the green (preferred the red). I have tried both bouillon and canned chicken broth (preferred the bouillon). Cumin is a new spice to me, so I cut it in half. First time I made it, I had left over dark chicken in the fridge from a store-bought roasted chicken. Added it to the beans and was blown away! Tasted like a mild chicken chili.

Unbelievable Chicken

After a week of quick meals, I was in the mood to cook and to try something new. The email featuring this recipe caught my attention. The only changes I made were to use only lemon juice from a bottle (it was all I had) and substituted 1 t. of Penzey's Spices Ozark Style Seasoning for salt and pepper. This was delicious served with brown rice and sauted zucchini. Keeper!

Garlic Herbed Chicken

I used fresh tarragon from my garden and boneless chicken thighs. As per another review, I added a touch of wine vinegar (acid) and marinated my chicken for about an hour before grilling. Excellent!

Tuna and Mandarin Salad

Pumpkin Pancakes

Made these for Christmas morning breakfast. Loved them! My husband ate them, but isn't a big pumpkin or pancake lover. Tried them with a pumpkin syrup, which was O.K. I liked them better topped with applesauce and vanilla yogurt. Would be good with baked apples and whipped cream too.

Fantastic Black Bean Chili

Love this chili! Instead of using canned black beans, I used "Ivis' Black Beans" recipe from this site (which I had in my freezer) and beef chili meat instead of ground turkey (which I also had in my freezer). I used diced tomatoes instead of crushed because that was what I had in the pantry. I did add one can of tomato sauce as well. I will definitely make this again!

Banana Wake-Up Bars

I had one very ripe banana, so I decided to use this recipe as inspiration. As suggested in other reviews, I used applesauce instead of margarine, whole wheat flour and a bit of cinnamon. I have a favorite "healthy cookie" recipe that starts with a package cookie mix and adds TONS of other things. I did that with these bars. . . I added additional oatmeal, raisins, craisins, coconut and toffee bits. Baked it for 25 minutes in an 8x8" pan. My neighbor and I loved them. The texture is more like a snack cake than a granola bar. I ate mine with my hands with no problems :) 7/23/13 - Ohmigoodness! Inspired by the thought of a banana split, tweaked this recipe today as follows: subbed 3 T. applesauce for margarine, added 1 small can crushed pineapple (drained) and a small handful of chopped maraschino cherries with mashed banana. Added a small handful of coconut, half a bag of Ghirardelli 60% cacao bittersweet baking chocolate chips and some cocoa (eyeballed it). Used mini loaf pans (filled 1/3 full) and baked 25 minutes. EXCELLENT! 2/4/14 - Made these Paleo for my daughter by substituting honey for brown sugar, gluten-free granola instead of oatmeal and almond meal/flour instead of wheat flour. Added raisins, craisins and coconut. Good!

Best Ever Meat Loaf

The only reason I even looked for a different meatloaf recipe was that I lacked the tomato sauce needed for my old meatloaf (I've been making the same recipe from a cookbook printed in 1963) for at least 34 years. What a surprise it was to eat THIS meatloaf! Taste, texture and sauce are awesome! I will not be making my old recipe ever again. BTW I used a combination of ground venison, beef and pork. Everything else was as written.

Sweet Cornbread Cake

Yum! I didn't choose this recipe for it's healthy nature, but because my husband likes sweet cornbread. It delivered! Made it for New Year's Day to go with black-eyed peas and cabbage. Neighbors also loved it.

Pumpkin Soup

I grew sugar pumpkins in order to make pies for Thanksgiving. Unfortunately, they didn't ripen in time. . . So, I now have pumpkin to use for other things. We've never had pumpkin soup before. This is an excellent -- smooth, rich and flavorful . I did change it up a bit (inspired by Craig's a Pumpkin Soup recipe)-- I sauted the onion and garlic in a pat of butter and small amount of olive oil. I added grated carrots and potatoes and sauted about 5 minutes. Added the stock, thyme, salt and pepper and simmered for about 20 minutes. Added cooked/puréed pumpkin and dash of nutmeg until heated through. Blended, simmered, added combo of half & half and 2% milk. Delicious !

Maple Apple Crisp

I love apple crisp, and wanted to try a few new recipes. I wasn't sure about about maple syrup, but it turned out great! What a perfect fall dessert with vanilla ice cream and coffee!

Black Beans

I had a bag of black beans and used this recipe to prepare them. We enjoyed them as a side dish the first night. I also used them drained over a green salad and in a Bean Bean Chili recipe from this site. Great depth of flavor! Definitely a Keeper!

Downeast Maine Pumpkin Bread

This is the tastiest quick bread ever! It is far better than my standard pumpkin bread recipe (which I started making in my high school cooking class 36 years ago.) The texture and spices were awesome! Highly recommended!

Daddy's Sausage and Peppers

I made this recipe as written except that I added an extra can of diced tomatoes and served it over linguine. It was beautiful and delicious! The next day I used the leftovers in omelettes. Excellent as well. Keeper.
