Marinated Grilled Pork Tenderloin

Loved this marinade! I was looking for a creative way to use some of the plum jam that I made last year and this looked interesting. I followed the recipe exactly for the ingredients, but used pork chops instead of a pork tenderloin. Grilled outside . . .perfect spring/summer food! We'll definitely be having this again!

Paleo Oatmeal (Not Really Oatmeal At All)

My daughter and son-in-law eat Paleo for health reasons. . . Wanting to spoil them a bit, I did most of the cooking during my recent visit. I have been wanting to try this recipe for a month or so. . . . I followed it exactly and used Granny Smith apples. This "oatmeal" took some time to put together, but was well worth the effort. It was a delicious comfort food, perfect for a cold winter morning! Will definitely be making this again.

Zuppa Toscana

My husband LOVES the zuppa Tuscani soup at Olive Garden, so I was thrilled when I found this recipe! I must say that I never followed it exactly. Instead, I made mine according to the changes recommended by Jobbly Man (thanks!) It was excellent! The second time I made it, my husband suggested we leave out the bacon. It wasn't missed. This is a regular for us now!

Skillet Apples with Cinnamon

I wanted something to go with homemade cinnamon ice cream. This fit the bill! It is like apple pie without the crust (perfect for company with gluten issues ) and didn't have to turn on the oven. I used this recipe for inspiration -- 10 Granny Smith apples, 1/8 cup ghee (clarified butter), maple syrup, cinnamon, and apple pie spice to taste. This would also be great in oatmeal.

Black Beans

I had a bag of black beans and used this recipe to prepare them. We enjoyed them as a side dish the first night. I also used them drained over a green salad and in a Bean Bean Chili recipe from this site. Great depth of flavor! Definitely a Keeper!

Sweet Cornbread Cake

Yum! I didn't choose this recipe for it's healthy nature, but because my husband likes sweet cornbread. It delivered! Made it for New Year's Day to go with black-eyed peas and cabbage. Neighbors also loved it.

Tuscan White Bean Soup

Excellent soup! I tweaked a bit . . . Used a pound of dried small white beans (soaked and cooked) and a 12-oz. package of bacon. Left out celery and wine. Did not blend or use the basil topping. This is a soup I will make frequently!

Pumpkin Oatmeal

Tweaked this recipe a bit -- used 2% milk instead of soy milk and puréed fresh pumpkin. Sweetened with maple syrup and brown sugar. It was ok.

Pumpkin Soup

I grew sugar pumpkins in order to make pies for Thanksgiving. Unfortunately, they didn't ripen in time. . . So, I now have pumpkin to use for other things. We've never had pumpkin soup before. This is an excellent -- smooth, rich and flavorful . I did change it up a bit (inspired by Craig's a Pumpkin Soup recipe)-- I sauted the onion and garlic in a pat of butter and small amount of olive oil. I added grated carrots and potatoes and sauted about 5 minutes. Added the stock, thyme, salt and pepper and simmered for about 20 minutes. Added cooked/puréed pumpkin and dash of nutmeg until heated through. Blended, simmered, added combo of half & half and 2% milk. Delicious !

Unbelievable Chicken

After a week of quick meals, I was in the mood to cook and to try something new. The email featuring this recipe caught my attention. The only changes I made were to use only lemon juice from a bottle (it was all I had) and substituted 1 t. of Penzey's Spices Ozark Style Seasoning for salt and pepper. This was delicious served with brown rice and sauted zucchini. Keeper!

Best Ever Meat Loaf

The only reason I even looked for a different meatloaf recipe was that I lacked the tomato sauce needed for my old meatloaf (I've been making the same recipe from a cookbook printed in 1963) for at least 34 years. What a surprise it was to eat THIS meatloaf! Taste, texture and sauce are awesome! I will not be making my old recipe ever again. BTW I used a combination of ground venison, beef and pork. Everything else was as written.

Blueberry Zucchini Bread

I had lots of blueberries from our produce co-op and decided to try this recipe. I love zucchini bread and was intrigued by the idea of adding blueberries. I followed tips from other reviewers -- half oil/half applesauce, decreased sugar by 1/4 cup, increased zucchini to 2.5 cups and put the blueberries on flour before folding them into the batter. I got five small loaves. It is tasty, but will not replace the zucchini bread recipe I've tweaked from high school cooking class (39 years ago!) Thanks for the inspiration!

Blueberry Crisp II

I, too, was leery of the mayo in a dessert recipe, but decided to trust the other reviewers. . . Not fully committed, I halved the fruit and made a full recipe of the topping. It went together quickly and was delicious hot with vanilla ice cream. Keeper!

Tackee David's Split Pea with Ham

My grandmother made split pea soup when I was a kid, but I refused to even try it because of the color. . . I grew up. When I make split pea soup, I usually wing it, but I had a ham bone this time and wanted some hints. I soaked my peas overnight and also added carrots and potatoes. Good, basic recipe. Keeper!

Applesauce Cake I

Very easy snack cake. . . and it is delicious! I like the hearty texture. We enjoyed it with coffee last night and breakfast this morning. Recommend! I have an old applesauce cake recipe that uses a yellow cake mix and is made in a bundt pan. It is "fancier" than this one, but I honestly prefer this cake.

Parmesan Tomatoes

I had some large round tomatoes from the produce co-op and was making a simple oven meal, so I decided to give this a try. It was very easy, but it isn't a dish that I'll prepare again. . . It reminded me of a recipe I've used for baked tilapia.

Pumpkin Soup

I had puréed sugar pumpkin that I wanted to use to make something new. . . I combined this recipe with Lea Ogawa's Pumpkin Soup recipe from this site. I sauted onion, garlic, grated carrots and grated potatoes in a butter/olive oil mixture for about 5 minutes. Added bouillon, pumpkin, fresh thyme and pepper. Simmered about 30 minutes. Used blender (about a cup at a time) til smooth. Returned to pot. Added a combination of half & half and 2% milk (eyeballed it). Heated through. It was delicious!
