Frozen Lemon Pie

After reading other reviews, I doubled the crust recipe, but made the filling recipe as written. It filled a 9X13 pan very well. I did use lemon pudding instead of vanilla pudding and everyone raved about it.

I don't know what I did wrong, but this definitely needed olive oil and tahini. Mine was way too thick & hot. I'll stick to buying my hummus from now on.

Apple Crisp IV

I made 1/2 a recipe for 6 people and it was more than enough. I didn't layer it, and I did add lemon juice to the apples. Everyone raved about it! I made it the morning of the dinner, and then put it in the oven to warm while we were eating. Don't forget the 2X churned low-fat vanilla ice cream, wonderful with it!

Refrigerator Pickles

These are the crispest pickles! I did cut the sugar in half, left out the sweet peppers, added 1 t. pickling spice instead of the celery seed and 2 t. red pepper flakes. Wonderful! I have had the piclkes for 1 week and already shared the recipe with 5 friends.

Pretzel Turtles

My son had these at work and told me about them. I make white coated pretzels and these are sooo much easier. One word of warning. I tried using Hersey kisses with caramel and they don't work well. Not enough caramel.

Maple Baked Pork Loin Roast

I just made this for 9 people up for the weekend. They all raved about it and ate it all. Here are my changes: I used 2 pork tenderloins (4 small), doubled the ingredients, used Sweet Baby Ray's bbq sauce instead of ketchup,6 cloves of garlic and didn't brown it first. I put it in a pan and covered it and baked it for 2 hours and the last 1/2 hr I took off the cover. It was melt in your mouth tender. It was wonderful with apple-stuffed acorn squashes and a salad.

These were great! They were fairly easy to make, and made a lot! They could use just a little more chiles, and maybe a little more hot pepper sauce, but other than that we ate them all up!

Shredded Beef for Tacos

I made this for our Bunco weekend, and it was delicious. Here are my changes: couldn't find mexican tomato sauce, so used 1 regular tomato sauce and an equal amount of taco sauce. I also used a defrosted roast, cut into big chunks. I cooked it on high for about 6 hours and then turned it down. There was a lot of juice, which I saved,and put back in the meat after I shredded it. All 8 of us decided it was way better than ground meat!

Ultimate Frozen Strawberry Margarita

Snowball Cake I

I made this for my January Bunco group and they absolutely loved it. It was a little difficult to make, but the presentation was great. I put it on my pedestal cake plate and it looked like a great big snowball. It was very light and refreshing. I did add the vanilla pudding but I don't think it was worth it and I found I needed 2 angel food cakes. I also added 1 t. coconut extract to the pineapple filling and it was very good! Definately a keeper!

Apple Bran Muffins
