Old Fashioned Paradise Pumpkin Pie
I made this for Thanksgiving this year. My sis-in-law says I'm to bring it every year from now on! I made mine in a deep-dish pie plate so I cooked it a bit longer during each step. I refrigerated the cream cheese layer in the pie shell for at least 1 hr before adding the pumpking layer & the layers remained separate. I too doubled the streusel layer, but there was some leftover over since my pie plate has a smaller diameter. Will definitely make again & again & again...

Barlow's Blackened Catfish
I'm glad I read the reveiws first. I cut back on the salt & cayenne pepper & it was still too hot & salty. I couldn't imagine this recipe with all the cayenne pepper that's called for! I think the salad dressing adds to the saltiness. I'll try it one more time further reducing those ingredients. We said it'd be worth another try, when we can actually taste it.

Baked French Toast
I made this for Christmas morning breakfast. It is most delicious & easy. I used pre-sliced french bread from the Oroweat thrift store. This recipe is a keeper!
