Baked Oatmeal II

I made some revisions like some of the other reviewers suggested: 1/2 Cup Brown Sugar (instead of a cup), 1/4 Cup Applesauce + 1/4 Cup butter, Raisins instead of Cranberries and I added chopped up pecans (about 1/4 Cup)and about 1/2 of a peeled, chopped up apple. I also used Coconut-Almond milk (from Costco) instead of milk. This turned out to be a great 'make ahead' Father's day breakfast. All I had to do was pop it in the oven for 25 mins in he morning. Yum!

Healthy Fish Tacos with Mango Salsa

So delicious & easy to make. Some revisions I made: I omitted the hot pepper sauce and only added 1 T of oil. I also added approx. 1/2 tsp dried coriander. I just used the fish I had on hand (president's choice blue menu lightly breaded haddock). For a sauce, I used mild jalapeno yogurt dip from Costco. Definitely a keeper.

Brazilian Fish Stew

This was great! My 4 year old son polished off his bowl too (with some parmesan cheese added to the top). I used Salmon fillets and as others mentioned, I used 5 T lime juice (3 in the sauce, then 2 at the end), 8 oz of baby potatoes cut up, 1 tomato, a larger can of diced tomatoes (28oz)and only 2.5 peppers. I didn`t bother cutting up the salmon because once it cooked, it flaked nicely. A complete dish. Delicious!

Baked Omelet Roll

My husband enjoyed this recipe more than I did because I'm still not sure that I like the texture of the egg (a little too dense for me). I followed other people's suggestions...Baked for 8 minutes until set, then added some bacon, onions, peppers, olives and mushrooms (which I had fried up earlier). I used Feta cheese instead of Chedder. I then baked for an additional 8 mins or so. It was easy to roll up because I had lined my 9 x 13" pan with parchment paper. Good served with sour cream and salsa. *(Next time I will try using less flour.)

Creamy Rice Pudding

We had a pot full of Basmati rice left over from our dinner so my husband doubled this recipe. It was delicious! He used brown sugar instead of white.

Tofu Parmigiana

Great recipe although because I did some of the changes as mentioned by others, it took a little more time. (i.e. I baked the tofu beforehand). Also, I used Medium tofu (as this is all I had on hand) so I had to be extra careful that it didn't fall apart. My husband loved it too and he doesn't like tofu.

Pork Tenderloin Marinade

Best marinade for pork ever says my 'meatatarian' husband! I halved the recipe because I only used it on 2 chops. Delicious and tender. Good smoky flavour. I added minced garlic as well. The teriyaki sauce I used was a 'stir fry' teriyaki sauce.

Honey Baked Chicken II

Yum. My husband and 3 year old loved this too. I only used half of the butter, added some minced garlic, doubled the curry and added a bit of corn starch (1 Tablespoon) with water so that it could thicken a little as it cooked. It was eaten all up!
