Fennel Risotto

Tasty. I thought the amount of fennel would be too much, but it isn't. I did find it too rich with the whipping cream so now I don't use it at all, I just increase the amount of broth. It still comes out creamy.

Gluten-Free White Bread for Bread Machines

I can't express how happy I am to have found this recipe. It's such a joy to have a slice of bread that tastes so good after years of going without. The proportion of ingredients is perfect. The only thing I do differently is I mix all the dry ingredients together in a bowl first before adding it to the wet ingredients. Also, as soon as the machine starts mixing I help it along with a rubber spatula as my machine does not do a good job. I always find gluten free bread tastes best when toasted.

Grandmother's Cheesecake

This cheesecake is delicious. I only gave it 4 stars because 500 degrees for 15 minutes made the top of the cheesecake very brown, almost burnt. I had to cover the top with foil. Next time I'll try it at 400 degrees. Also I didn't bother with the pastry trimmings as stated in step 5, I used almost all of it in step one.This makes it much easier.

Brisket with BBQ Sauce

DELICIOUS! I've made this several times. I think it's better if you remove the pan drippings before adding the bbq sauce. I know that doesn't sound right, you'd think the drippings give more flavour, but with the drippings the sauce is too thin and not as intense flavoured.

It's amazing how something so quick and so easy can taste soooo good! Since fresh strawberries aren't always available, I substitute thawed frozen strawberries in syrup.

Roast Pork with Maple and Mustard Glaze

This is a very good recipe. I used a pork butt roast,covered with foil in a 300F oven for 3 hours. The meat was soft as butter. The sauce is very sweet so I only used half the amount, and just drizzled a bit of it on the meat when serving.

Old Fashioned Coconut Cream Pie

This is a very good pie. I used 1/4C. flour and 1/4C. cornstartch. I cooked the filling on top of a double boiler over medium heat. It only took about 10 minutes for the mixture to thicken. I used unsweetened coconut, so it wasn't too sweet. This pie is quite rich so the serving size can be smaller than other pies.

Key Lime Pie I

Excellent recipe. Very easy and tasty. The only thing I changed is that I don't freeze the pie, I refrigerate it, I think it has a nicer texture that way.
