Ratatouille

I have been making ratatouille for years and this is the best ratatouille recipe that I have ever made. I could have eaten the whole thing by myself. The only thing that I did different from the recipe is that I didn't add any salt because parmesan cheese has enough flavor in my opinion.

Zeppole

I just finished making a batch for the first time and increased the sugar to 1 tbsp. It was very good but still needs more sugar in the batter. I will make them again but will increase the sugar even more next time.

Raisin Peanut Butter Bran Cookies

These cookies were great. Didn't taste like healthy food at all. I did change the cooking time to 10 minutes though and added 1 cup of melted chocolate chips to the batter instead of raisins.

this recipe was great! absolutely nothing wrong with it. It was full of flavor and looked beautiful. I did substitute half of the black olives with chopped up grilled red peppers. It was wonderful!

This is great coleslaw! I quadrupled the recipe for supper last night and it is already practly all gone (we are a family of 3). This is a great keeper! And Splenda works great in this too!

Caramelized Baked Chicken

Salisbury Steak

I didn't have any condensed onion soup so I used Lipton onion soup mix and added 2 cups of water to it. I then followed the directions for the rest of the recipe untill it came to simmering the gravy over the meat in the skillet. Instead I followed someone else's advice written in one of the reviews and put it in the oven at 375 F for about half an hour. I couldn't believe what I taisted. Mmmmmmmmm! It was so good.

Best Ever Fudge

This was the best and easiest chocolate fudge I have ever made. My whole family loves it. It's perfect. I did however use coco powder instead of the unsweetened chocolate because that was all I had on hand and I followed the advice of a previous reviewer to line my pan with wax paper for easier cutting and clean up. Wonderful!

Spanikopita Muffins

The batter was way too thick. I thought it would become softer when I added the spinach and feta cheese like when you make a carrot cake but it didn't. After they were cooked, the muffins were very chewy. I will never make these again.

Spinach Quiche

Absolutely amazing! I used regular feta cheese and extra old cheddar cheese. All my ingredients were fresh as well. It turned out super. I will definately be making this again

Pasta with Scallops, Zucchini, and Tomatoes

This recipe was soooo good. I used a can of drained, diced tomatoes, insetead of fresh tomatoes and it was just fine. Everybody loved it and it was very fast to make. I will be cooking this meal for dinner many times in the future

Best of the Best Blueberry Muffins

these are absolutely the best muffins in the world! I also used 2% milk with a spoon of vinegar instead of buttermilk as a previous reviewer used as an alternative. You MUST try this recipe.

Papaya Bruschetta

This recipe was great. The first batch was eaten all up by the second day. I was even asked to make it again when it was almost finished. I did and that batch was all eaten in half a day. I made some changes to the recipe though. Instead of a red onion, I added onion powder and to the dressing, I added a cupple of dashes of pepper instead if papaya seeds. It is safe to say, I will definately be making this recipe quite often.

Oat Bran Muffins

My new favorite muffin recipe. I did make a few changes while making them though. Instead of 1 1/2 cups of oat bran, I only added 1 cup (because I ran out oat bran) and I was very generous with the apple sauce. I also added 1 tblsp of cinnamon. They were very moist and sooo good
