Bread Machine Pizza Dough

If you want your home to smell like a pizzaria, make this recipe! I made a double recipe in my bread machine, used half whole wheat flour and 2 tsp brewers yeast as well as 2 tsp garlic powder and 2 tsp basil as others had suggested. Used one can lager beer and topped it off with warm water and mixed with Braun hand mixer to get the bubbles out. I did have to add about 1/2 cup more water when the bread machine started squeaking. The dough was perfect! Pre-baked for 5 min on a pizza stone with fine corn meal on the pizza peel. Loaded the two thick-crust pizzas and baked till done.

Sausage Casserole

All your favorite breakfast foods rolled into one! Did the hash brown crust separately throwing in some onion and red bell pepper, salt & pepper. Used the 8 eggs. Was worried it wouldn't all fit in the pan, but it did, BARELY! Scrumptious! Will make again for a brunch crew.

Pie Crust III

Never Again. Way too oily. The dough literally melted down into the bottom of the pie pan and I had to take it out and add more flour and start over TWICE! Where oh where is that oil crust recipe Betty Crocker had in its 1960's cookbook?

Russian Cabbage Borscht

This recipe is awesome! My whole family gobbled it up. I used more beets and even some greens. Put in some beef gravy I'd made from pan-seering some steaks instead of broth. Used 1/4 c. tomato paste. Otherwise, followed the recipe. I'll make this again! DELICIOUS!

Chicken Tortilla Soup V

This is a fabulous soup! I floured and fried up 8 boneless,skinless,defatted chicken thighs (in 1/4 cup sunflower oil)first. Took out 4 for shredding and saved 4 for another meal. Poured a box of organic low sodium chicken broth into the brown bits of the frying pan and boiled them a bit to soften. Pouring that into the soup made for a VERY hearty flavor. I used salsa verde instead of chunky salsa. Garnished with cilantro and pepperjack cheese. I'm making a double batch next time since my family wolfed this down with little to spare.

Spanish Rice II

One of the easiest and best tasting spanish rice recipes I've ever had! Can add beans to it or use tomato sauce instead--can even use salsa in it and on it! YUM! Kids really love it!

Baked Dijon Salmon

Beef Barley Vegetable Soup

I browned 1 lb of beef tips in oil, added water, then pressure cooked 20 min. till soft, (with the bay leaf and 1 cube bouillon), added the barley and pressure cooked it again for 15 min., then added the sauteed vegis MINUS the tomatos, water and the rest of the bouillon. EXCELLENT!

Butternut Squash Soup

fabulous soup considering everyone else's alterations--less creamcheese, etc. I also used some zucchini since didn't have a full 6 c. of winter squash. Don't need to dirty an extra pan to fry onions first, either, just boiled them with the squash. Used butter instead of margarine...better flavor.

Moussaka

Superb! I live in Greek Cyprus and this recipe is exactly what I was looking for. I wanted to cut out the extra cup of fat from the olive oil and butter so I broiled the eggplant until browned with olive oil sprayed on top & bottom of thin slices. Diminished the cinnamon & nutmeg to 1/8 tsp ea., (did use oregano, basil & thyme)and left the nutmeg out of the bachamel. I used only 2T butter in the meat sauce. It was fabulous! I'm glad it makes so much--can't wait for the leftovers!

Green Bean Okazu

Chopped fresh basil certainly improves this simple, time-saving dish. I'll probably add some black-bean sauce next time. I sauteed onion and garlic with only 1/2 lb. ground beef too. The kids liked it.

Vietnamese Beef And Lettuce Curry

The cumin must be a type-o as previously mentioned. I used cumin and it tastes more like taco salad. Might try it with curry powder next time. The kids still liked it.

Smooth Cauliflower Soup

Great way to use up leftover broccoli stems! I sauted 2 minced garlic cloves in 2 T butter, added the nutmeg and 1/2 t salt. Chopped the broccoli, cauliflower and carrot and put in pressure cooker for 10 minutes w/ the garlic, 4 1/2 c water and 1 cube vegi bouillon. Even my 4 and 6 hear olds had seconds! Beware using stems; they must be well peeled or will need to use a blender instead of a Braun. DELICIOUS!!!

Tortilla Chicken Vegetable Soup

I used only one can of tomatoes and we added lime juice at the table. Put in a couple of mild green peppers too. Excellent flavor, beautiful color, and lots of it--perfect for company or for freezing leftovers. Great way to get rid of stale tortilla chips too!

Mom's Pumpkin Pie

I doubled this recipe to make two deep dish Thanksgiving pies. One was sold for charity and the buyer came back later and gave them double the price saying it was THE best pumpkin pie he'd ever had. I did have to cook it 2 hours, putting aluminum foil over it for 30 min. at a time so the crust wouldn't scorch. I have also made it with only 1 c. milk at 375 for only 30 min--much faster. This recipe is a winner!
