Vegetarian Pumpkin Spinach Chili
I really did not like the mix of flavors with this recipe. My husband said that it tasted better the next day, but I really had a difficult time eating it (I gave it two, instead of one star because my husband found it edible). It looked like it had potential, but I really don't know what I would do to even doctor it up!

Frank's Favorite Slow-Cooker Thai Chicken
This was amazing! I read the reviews first and made the following alterations: added a little more peanut butter (used creamy), added a little more lite coconut milk, added some fish sauce (probably 1 or 2 tablespoons), added Sriracha hot sauce (probably 1-2 tablespoons) and added an extra tablespoon or two of limes. I also shredded the chicken and let it cook for an additional hour or so. I mixed in peas at the end and served it over brown rice -- amazingly tasty (albeit not low fat).

Slow Cooker BBQ Chicken
This was fantastic, it's amazing how easy it is shred chicken breasts (I just purchased my slow cooker). Instead of putting them in buns, we made bbq chicken quesadillas -- pan fried (with no oil) flour tortillas, with some cheddar cheese and the chicken. Delicious!
