I'm a mother of two young boys and enjoy cooking for my family and friends. When I am not in a hurry, I find cooking a creative and relaxing hobby. I especially love to cook while listening to smooth jazz :)

My cooking triumphs
I once made a very difficult beautiful raspberry & lemon cake for a friend's birthday. That was Before Children ;) A recent triumph is that I finally am able to make delicious and beautiful devilled eggs! It used to be that I couldn't peel an egg without putting nicks in the eggs. I think the trick is you have to be sure to soak the eggs in cold water after they are cooked. . .just speculating :)
My cooking tragedies
Many many years ago I made tiramisu for a potluck and I think I put too much coffee on the ladyfingers. Well, needless to say, my tiramisu came out very soggy and I was so embarassed. . .

Delicious Ham and Potato Soup
My family and I loved this recipe...yummy and creamy! I used low sodium chicken broth and added about 1/3 cup diced carrots, 2 minced garlic cloves, and shredded white cheddar cheese. Before I added the cheese, the broth seemed thinner than I thought it would be. However, after adding the cheese, the broth was nice and creamy :). I highly recommend this recipe!

Seven Layer Dip II
My family loved this layered dip! I was a bit skeptical about mixing taco seasoning with the sour cream but it was very flavorful. I loved the idea that the guacamole was homemade not from a tub ;) I followed the recipe instructions exactly except that I used more avocados (as mine were small), sour cream, refried beans, and shredded extra sharp cheddar cheese (instead of the Mexican blend...I like to shred the cheese myself as it seems moister that way). I'll definitely make this dip again :)

Chicken Enchiladas II
This recipe is a nice alternative to the traditional red sauce enchiladas. Although I do like the traditional red sauce, I have to limit my intake of tomato sauces due to heartburn. The only changes I made was to double the sauce and substitute yellow onions for the green onions. I also used fresh minced garlic instead of powder. These substitutions helped to give the sauce more flavor. I used 8" flour tortillas and it made 12 enchiladas with plenty of filling and topping! The 12 enchiladas fit nicely into a 9 x 13 glass baking dish. My husband and 10 year old son LOVED it! We almost ate the whole thing ;).
