This is the perfect mixture, and it doesn't matter what fruit you use as long as you have the correct portion of the ingredients. It always came out absolutely fabulous. Compliments to the creator! I've never seen a better base batter the doesn't require butter. The is very guilt-free. The key to perfection is you really need to have your dry parts mixed and ready to go. As soon as the wet ingredients are mixed, dump the dry stuff immediately and mix for only a few seconds, and dump the fruit in and mix for literally 2 seconds and place in oven immediately. Speed is the key to getting this perfect and moist. If you over beat it, yes it will come out tough or flat. I've even raised the qty by 1.5 times the original serving, and put into a 9" x 13" loaf pan and it was still perfect. I don't sprinkle the sugary crumb on top, as that would make it unhealthy. Otherwise, it's worth every star.
