Spinach Chickpea Curry

Red Lentil Curry

I made this the other night for guests and it turned out extremely spicy. However, this is my own fault as I got a bit over-zealous with the cayenne pepper I was adding....I love spice but I added too much to handle! I will be making this again, but I will tone down the heat next time.

Amy's Garlic Egg Chicken

I made this last night. I used about 6 egg yolks for the marinade. Turned out really well, but the amount of garlic used is a bit overpowering. I will certainly try making it with less next time (perhaps leaving out the garlic powder in the bread crumb mixture).

Szechwan Shrimp

Loved this dish. I did tweak it a bit. I took the suggestions of other reviewers and doubled the sauce mixture and I used real ginger instead of ground ginger. I added one clove of garlic, cayenne pepper and a bit of sriracha sauce because I like things SPICY! I of course used raw shrimp.....it always tastes so much better than precooked shrimp. I also added in some snow peas for some green color. Turned out wonderful! My boyfriend was complaining that there wasn't any more for seconds so I may have to make more next time!

Balsamic Chicken and Fresh Mozzarella

I made this the other night and I tweaked it a bit. I LOVE balsamic vinagraitte and fresh mozzarella together so I was very excited to make this dish. I took the advice of another reviewer and baked it. I placed the tomatoes on top after 20 minutes on 350 and baked for another 5 minutes. I then added the mozzarella (I added some feta as well) and baked another 5 minutes. It was pretty good.....but it did not live up to my expectations. I think I will try pan frying it next time....perhaps it will turn out better.

Parmesan Crusted Tilapia Fillets

I added breadcrumbs to cheese/paprika/parsley mixture (I'm not worried about carbs). It was by far one of the best tilapia dishes I've made. So delicious!

Sesame Asian Tofu Stir-Fry

Overall a great recipe. First off, I took the advise of other reviewers and did not use 6 tbsp of oil. Also, for the tofu, here's my suggestion from my "hippy" days as a vegetarian :)Take your tofu and wrap it up in paper towels or cheese cloth and place a pan (or anything heavy) on top. This will push out all the water. Leave it for about 30 minutes or so...it will shrink some. Get your rice vinegar/soy sauce/honey/chili sauce mixture ready. Then Soak the tofu in your mixture for another 30 minutes. I recommend this to give the tofu even more flavor! I couldn't find bean sprouts at the store so I used sliced mushrooms instead; I also added some spinach for some extra leafy-ness. I also used a TON of soy sauce and a bit of teriyaki sauce when I was cooking the veggies. I can't eat a lot of pasta (gastric bypass) so I left out the lingune on my plate and had mine with just tofu and veggies (my partner had the linguine in his and he LOVED IT!)Very delicious....we will be making this again!

Spicy Garlic Lime Chicken

Great recipe. As other reviews had suggested, I doubled the spice mixture (I also added a bit more cayenne pepper...I like my food extra spicy!). I also added a bit less lime juice than the recipe called for and I added some chicken broth at the end for the sauce. Still super tasty!

Bengali Chicken Curry with Potatoes

Excellent! My partner usually doesn't like Indian food, but I made this for him (I'm trying to convert him) and he came back for seconds AND thirds. So delicious! I'm even thinking about trying it with shrimp next time.
