Like many others, I thought this combo sounded odd, but the reviews were so great...well, it lives up to the ratings. I think the amounts were good - the filling was perfect for the nunmber of tortillas and I liked the half and half mixture.
I used queso blanco inside the burritos and did one pan of refried black beans and one pan of refried pinto beans. Topped both pans with enchilada sauce and served with sour cream, salsa, guac, green onions, jalapeno peppers, & crumbled queso fresco so everyone could adjust to their taste. They were a huge hit with everyone, including my friend who doesn't like sweet potatoes.
