Broiled Tilapia Parmesan

Tilapia is a nice fish, but this recipe doesn't enhance it in any way if you ask me. I've used much better recipes. I found the consistency of the topping a bit odd, not to mention difficult to apply to already hot fish. The flavor is okay, but nothing special. I might make this again for a really quick, simple meal for myself, but I would never make this for guests.

Addictive Sweet Potato Burritos

Like many others, I thought this combo sounded odd, but the reviews were so great...well, it lives up to the ratings. I think the amounts were good - the filling was perfect for the nunmber of tortillas and I liked the half and half mixture. I used queso blanco inside the burritos and did one pan of refried black beans and one pan of refried pinto beans. Topped both pans with enchilada sauce and served with sour cream, salsa, guac, green onions, jalapeno peppers, & crumbled queso fresco so everyone could adjust to their taste. They were a huge hit with everyone, including my friend who doesn't like sweet potatoes.

Chocolate Cappuccino Cheesecake

The cheesecake was really moist in the center after baking, but the consistency was great once it had chilled overnight. It did have a large crack when done - I've made a lot of cheesecakes too adn this was the worst I've seen, but I spread the whipped topping over the whole thing and shaved chocolate onto it so it looked fine. The taste was fabulous. I heard over and over at hte dinner party I took it to how it was the best dessert anyone had ever had. I highly recommend you share this with company (it's really rich as well).

Honey Roasted Red Potatoes

I doubled the recipe, but left the same amount of butter so it was essentially halved. I also added some garlic powder and cayenne pepper. I also used dijon mustard instead of the powder (same amt.). Next time around, I will use even less butter, but these were a hit. I will make them again and again (oh, and I made them with a meatloaf so I let them bake with it at 350 for an hour).

Annie's Fruit Salsa and Cinnamon Chips

I used blueberries instead of rasberries because that's what I had, but this recipe was great. I made it for a dinner I had for a few friends and they LOVED it. I couldn't keep the chips coming fast enough. It does make quite a bit so it wouldn't hurt to cut it down a bit unless you're making it for a party, but I would highly recommend this as a healthy, yet delicious dessert.

Grilled Spiced Chicken with Caribbean Citrus-Mango Sauce

This chicken was fantastic and a big hit at a recent dinner party I threw. I left the anise out of the rub and used spiced rum instead of dark rum, but otherwise, left the recipe as is. I served it over basmati rice w/steamed green beans that I then sauteed w/a little olive oil and slivered almonds. I can't say enough great things about this meal. The sauce thickened up really nicely and had a great flavor over the spiced chicken. I will definitely make this again and again. (Oh, I also baked the chicken as I live in a condo and cannot have a grill - it was still delicious). Thanks Linda!

Black Forest Chocolate Mousse

I made this for someone who I knew loved chocolate and cherries and it went over really well, as did the leftovers with all of my friends. I did think the consistency was a little off, but I made it the night before and it was still good when I served it. I made chocolate cups to serve it in by melting 12 oz of semisweet choc chips and 2 tablespoons of butter, then brushing the choc mixture onto foil muffin tins (about 1/4 in. thick). Once they had set in teh fridge, I peeled off the foil and filled them with the mousse, topped them with whipped cream and a cherry and put them on a plate drizzled with chocolate and rasberry sauce. It was restaurant quality (according to a friend).

Lemon Pepper Pasta Seafood

Like others, I couldn't find lemon pepper linguine. I used garlic fettucine instead and halved the garlic in the recipe. With shrimp and scallops, it was fantastic! Both of my friends and I finished it!

Chicken Marsala

I was thoroughly disappointed in this. I followed the recipe to a tee. The chicken was very tender, but it was way too much butter and oil, leaving the sauce runny, no breading on the chicken, and hardly any flavor to the sauce. I can't believe the rave reviews this recipe has received. I wouldn't recommend it to anyone.

Spinach Lasagna III

This lasagna was excellent. I think it could have more spinach to actually be considered spinach lasagna, but boy was it good! And my boyfriend (not a regular cook) made it and it was still delicious!!

Alice's Sour Cream Chicken Breasts

Sauce didn't thicken as expected. I think it's helpful to add pasta or rice (I used orzo) and veggies, and then microwave. I also cut up the chicken and browned it first so it would cook faster. Very tasty though.

BBQ Chili Pasta

I was really disappointed in this one. I think the BBQ sauce is overpowering and doesn't mix well with the spices. Although it was really easy, I would never make it again.
