Chicken Breast Cacciatore

Like another reviewer,I didn't have cornflakes so I used breadcrumbs. I baked half of the breasts in the oven at 350 degrees for about 45 minutes and the other half in the microwave as suggested in the recipe (my boyfriend was starving and couldn't wait). Of course, the oven version was a lot better. I give the microwave version 3 stars and the oven version 4 stars. The microwave chicken is a little rubbery. Anyway, I'll make this again because it's easy and that's important after a long day at work.

Aunt Teen's Creamy Chocolate Fudge

I bought some fudge at a local fair and wondered what made that recipe so great. Hers was sweeter and creamier than the kind I make and I wondered what her recipe was. She wasn't sharing. I think this recipe has to be it! It has something to do with the milk chocolate/semi-sweet chocolate chips, probably. Usually I use just semi-chocolate chips but the milk chocolate adds something extra. It seemed strange to me to add the marshmallow creme at the same time you add the evaporated milk, but I did it anyway. Make sure you cook it on low-medium heat because it started scorching on the bottom. This is a great recipe. I'll definately use it again!

California Smoothie

I added 3 cubes of ice and the juice of one lemon (and the lemon zest...why not? I like things tart). I also used frozen raspberries instead of strawberries. (I guess I changed it a lot). But WOW...this tasted like raspberry sorbet. It was Magnificent!

Apple Crisp II

Yum. It takes awhile to peel and slice all the apples but it's worth it. I made extra of the oatmeal mix like others suggested and it is a good idea to not add the water because to the apple portion because it gets runny. This is very sweet so it tastes best with ice cream.

Garlic Butter Sauce I

Maybe a little too much oregano for my taste but overall pretty good. Plus it was easy. I added a little garlic salt and put it over some grilled fish and rice.

Raspberry Banana Tofu Shake

Spam on the Go

I don't usually like Spam but this was pretty good. I bet it would be really good with real ham pieces. I made this as a side dish because from the looks of it, it doesn't seem like an entree (basically spaghetti with pieces of Spam cubes throughout with speckles of pepper). The flavors work well though and it's really inexpensive to make.

Tuna Casserole III

A quick and easy meal. Perfect for the days when you don't want to spend time in the kitchen. It deserves 5 stars just because of how simple it is but I gave it 4 because it didn't have pasta and I think it needs it. I added pasta to the soup/tuna mix as someone had suggested because I wanted it to be hearty. Crushing chips on top is a great idea.

Baked Ziti I

The sour cream is what separates this recipe from others that I have tried. Yummy! Update 10/8/09 - I made this for a Halloween Bunko party and did as the others suggested and mixed the sour cream with the ziti and it worked so much better plus I used some mild Italian sausage...it was so good. I'm changing my four stars to five. I made a batch and a half and it made two large casseroles with plenty to eat for everyone. I also prepared it the day before and put it in the refrigerator to bake the next day (just bring it to room temperature before you bake it). It had rave reviews from my guests.

Mocha Chocolate Chip Banana Muffins

I rated these before with 5 stars but after eating a few I decided I would really like these better without the coffee and the chocolate chips. The muffins are really moist so they make a wonderful recipe for banana nut muffins. They don't rise very much so I'd also fill up the cups more next time to make them more jumbo size.

Real Italian Calzones

Fabulous! I used mozerella instead of cheddar. I didn't have ricotta so I just mashed up some cottage cheese. There is a lot of basil in it but it works. Also, the bread is wonderful. I made sure I kneaded it for the 5 minutes and it rose quickly in the window where it was warm. My boyfriend said, "I really, really, really like this". I'll make this again!

My boyfriend thought that this was great! I did what someone suggested and added the 1/2 cup white syrup, 1/2 cup milk and 1/4 cup water instead of the 1 1/4 cup water.

Texas Brownies I

This is actually called "Texas Sheetcake" where I'm from (Austin). I've also seen it called California sheetcake. You can put it in cookie sheet and make the cake pieces thin (which seem like brownies, I guess). Oprah had a version of it on her website once but it didn't have the cinnamon. It's great with the special frosting.

Marshmallow Popcorn Balls

This may seem weird, but add a small box of flavored jello to the marshmallow mix. My mother used to make them that way when I was a kid. I loved loved loved them. You can also add 1/2 cup brown sugar to the marshmallow and butter mix. That way it tastes a bit like caramel popcorn.
