Chicken Dumpling Strips

First of all, this recipe is easy and has a good flavor. I just can't seem to master the dumplings. I think the dumplings need to be thinner than 1/4 of an inch. Plus it needs about 2 cups more broth.

Peppermint Meringues

Wow! How fun these are! I wouldn't change a thing. Apparantly, as I was told by a farmer I know, in the old days they called meringues "Calf Slobber". The peppermint on top gives it enough peppermint flavor where you don't need to add any extract. Also I don't know how you could make 4 dozen out of this. I made them about the size of a whole pecan and barely got 3 dozen calf slobber.

Breaded Turkey Breasts

Glad to have found a turkey cutlet recipe. Better than chicken, I think. Smells good. Tastes good. Needed some salt on the meat or in the bread crumbs to bring out the flavor.

Best Ever Cheese Fudge

Thought I'd try something different. This fudge is pretty good unless it's sitting next to fudge made the old fashioned way as it did at a Christmas party. Nobody went back for seconds.

Slow Cooker Ham

Sometimes when you cook something yourself you are more critical. I thought this was just ok but my family loved it. I used a 5.5 lb. spiral cut picnic ham so it only took about 5 hours. I'm impressed because it was practically effortless.

Cranberry Corn Bread

As far as corn bread recipes go...this one is great because you can make it with or without the cranberries. The texture isn't as dry and crumbly as some corn bread recipes and it has a touch of sweetness.

Carne Guisada II

I told another teacher I work with that I made Carne Guisada and that I liked it but it took too long to cook. She laughed when I told her I cooked it for 8 hours and that I was supposed to cook it for 12. Her heritage is hispanic and she said, "It's just stew meat. You can cook it in less than 3...if that". So now I get jokes about my day-long Carne Guisada.

Strawberry Cake I

A very pink cake! This would be fun for kids but I thought it was a little too sweet because it had the recognizable Jello flavor to it. The real strawberries are tasty but they make it a bit soggy.

Savory Chicken Breasts

The only addition I made was adding garlic powder when adding the pepper. This is easy to make and works well over noodles or rice. It deserves 5 stars because you don't spend forever in the kitchen and it tastes good.

Butterfinger Cookies

I found the exact same recipe in a recipe book from Indiana...the only difference is that it used shortening instead of butter, chilled the dough and baked the cookies at 350 degrees instead of 375. I think those changes make a difference on the texture of the cookies.

Potato Ham Bake

Easy to prepare although it does take awhile to bake which is ok if you aren't immediately hungry. I didn't think it would have enough liquid at first but it all melts together very well. Used cream of chicken soup instead of cream of mushroom because that's what I had. Used slices of Velveeta which made it very cheesy! I nixed the peas because I don't like them but I think broccoli might be good on this next time I make it.

Yeast Biscuits

The recipe makes 30 biscuits but I made 21. We'll be eating these biscuits for days. I probably made them too big although I didn't think I was when I was putting them on the pan but they rise a lot. Otherwise, I followed the recipe exactly. They are moist and taste good fresh out of the oven.

Hamburger Soup III

Good and hearty soup! I did what someone suggested and added a generous dash of Worchesterchire sauce to give the broth more flavor. I used 1 can of diced tomatoes instead of 2 cans of stewed.

Slow Cooker Enchiladas

Mmmmmm....cheesy! I had to make my own salsa with rotel tomatoes, onions and green chilis because I didn't have enough salsa but it worked great! I served it with some Bush's pinto beans, but next time I might just add them to the casserole because they rounded the meal out really well.

Heavenly Angel Food Cake

This cake is wonderful by itself but for the frosting you can take a 12 oz. carton of thawed whipped topping, a 6 oz. carton of raspberry yogurt and 1/3 cup confectioner's sugar and mix it together. Slice the cake horizontally in to thirds and fill with the cream mixture and then frost the entire thing. Add some fresh raspberries on top and you have a fantastic dessert! Keep the extra in the refrigerator. Scrumptious!
