French Baguettes

A few weeks ago I made some "authentic baguettes" from France which I liked for its crispy crust but I noticed this recipe and I thought I'd try it too because it used the same ingredients but it was easier due to the breadmachine (and there was the small addition of sugar and an egg wash before baking which makes it beautifully golden). Merging the two recipes, I think that some other reviewers are absolutely right in the idea of spritzing the oven walls with water a few times early in the baking (spritz the walls every 30 seconds for the first 2 minutes) because the steam creates a crispier crust.

Mississippi Mud Brownies

I have this exact recipe that I got from the lady I used to babysit for when I was 13 (I'm 40 now...yikes). It's only different in the way that the marshmallows are not added to the batter. I suppose it has morphed like tons of other recipes...but adding the marshmallows to the batter makes it a lot more gooey (although it is called "mud" pie). For this recipe, in my opinion, it works better if you put the marshmallows on top after it's baked and cook it for 2 more minutes until the marshmallows melt. Then let it cool and frost with chocolate frosting and sprinkle with nuts when the frosting is soft.

Southwestern Mini Muffins

These are very tasty--a good combination of flavors and not overpowering where the mustard is concerned. It's nice to have a savory muffin for a change. Next time I'll use hot green chili instead of mild to spice them up a bit.

Pina Colada Punch

I had high hopes for this recipe because of all the great reviews but it is just too sweet and rich (and I love sweet things!). I made it in advance to test it before serving it at a party but I could barely drink a glass. Now, I have tons in the freezer I don't know what to do with.

Great recipe! I usually make the frozen kind when frying fish...never again. These are ten times better and easy to whip up! They fry quickly too so you're not slaving over hot grease.

Danish Kringle

Incredibly outrageously sweet! I think next time I will try it with the cherry or apple filling instead of the brown sugar filling because it creates a syrupy buttery soup around the kringles and it's quite messy and impossible to contain inside the dough (unless maybe you use a lot less of the filling than it asks for). Great with a glass of cold milk to keep the sweetness down.

Peachy Chicken Picante

A quick, spicy, colorful dish. I enjoyed it. My boyfriend doesn't really like cooked fruit in anything unless it's a dessert so he ate everything but the peaches. I think this had nice flavors, nothing extravagant...simple ingredients. I think it would probably work with canned pineapple too.

Marshmallow Treats

Usually I just guessed on the amount of butter, marshmallows and cereal and I was never consistant. I never added enough butter, no wonder my treats never were as good as my mother's. These are perfect.

Nick's Favorite Cherry Pecan Bread

Resembles fruit cake in a way. It's very moist and chock full of cherries and nuts. The only problem I had with it was that it got really brown around the edges but I couldn't take it out of the oven earlier because it needed the whole 55 minutes to be done in the middle...I used polish stoneware; maybe a different bread pan would be better.

Yummy! If you are lucky enough to have these ingredients on hand, this is worth a try. I used frozen blueberries and strawberries so I didn't need as much ice.

Busy Day Barbeque Brisket

All the spices overwhelmed the flavor of the meat. I think it might have been better to use just a bottle of really good bbq sauce, some garlic & onion powder and paprika and a touch of cayenne. Forget all the other ingredients, especially the liquid smoke.

Yeast Hot Rolls

This recipe is great except it's missing one important step: Let the rolls rise again on the baking sheet before you bake them. I made a sheet of rolls and some "bubble bread" because it makes a lot of dough. Both were great.

Amish Casserole

I like the idea of adding brown sugar to the beef portion although I think 1/4 of a cup is a little too much. If I made this again, I'd cut it to two tablespoons. I think if you didn't use American cheese it would be too dry because American cheese melts differently than other cheeses and it adds some moisture.

Noodles Alfredo

I probably used too many noodles because I had to estimate from a big bag so it wasn't very saucy. This is a good side dish. You could probably use different kinds of cheese if you wanted to.

Beer Cake I

I used DOS EQUIS beer. It's very moist. I didn't really detect the beer flavor in it...maybe only slightly. It baked in only 45 minutes so check your cake early. Dump it out of the bundt pan while the pan is still warm. Use shortening, not margarine or oil, to grease pans, as margarine and oil absorb more readily into the batter causing it to stick.
