Strawberry Cheesecake Quesadillas

It isn't fancy but it's fast and hits the spot so it deserves 5 stars. I used butter on the pan, rather than cooking spray and went easy on the cream cheese and jam so it didn't make much of a mess.

Lemon-Raspberry Muffins

This made about 12 muffins, but I filled the cups up a little higher because I didn't want to use another muffin pan for about 3 muffins. These have a great flavor but they do brown quite a lot on the sides and on the bottom, almost burnt. But they stay very pale on the top. I only baked them for 20 minutes. I'm not sure how to remedy that except for maybe using butter instead of oil or baking them for less time.

Mulled Cranberry Cider

mmmm...wonderful on a cold day. The only changes I made was that I didn't have enough honey so I used some corn syrup to sweeten it up and I used about 1/2 cup of it.

Shepherd's Pie

Great! Instead of the salt, I added 1/2 a bag of Lipton Soup Mix like a reviewer suggested. Had I not done that, I think it wouldn't have been as flavorful. I drained the vegetables but later added a little water to thin it out to make it more like gravy.

Buffalo Chicken Wings I

Deliciously spicy and buttery goodness! The only recommendation I would make is that in the initial frying make sure you get them golden and crispy and well drained before you fry them in the sauce so you'll have to fry them for a lot longer than 10 minutes. If the skin is not well crisped, the wings will be soggy. I had to fry them in batches because I didn't have a whole quart of oil so it took a bit longer. We dipped them in Ranch dressing. Reminded me of the chicken wings at Waterloo restaurant.

I used "canned blueberries", I know...I know...it may have changed the integrity of the batter because of course, the batter was bluer than they would have been with fresh or frozen but I'm giving the recipe 5 stars because even with the canned blueberries, I really liked them.

Easy Rum Cake

I don't usually like rum cake because it's too soggy but my bf does so I had him score this recipe. It's very moist, amazingly so. It doesn't have that coffee cake texture that crumbles apart when you cut it so I was impressed by that. It didn't get too soggy, although I used only half the glaze. It also freezes well.

This is very thick and sweet. Next time I'll use a little less jam to thin it out and a stronger vinegar to balance out the sweetness and see if that helps.

Vanilla Ice Cream VI

SUPER EASY! I liked that this recipe didn't require cream which is much more expensive and leaves a greasy feeling in your mouth. Not having to cook it was another bonus. I didn't add the water, which is what I thought accounted for the ice crystals others reviewers were talking about, instead I just added another cup of whole milk in place of the water.

Strawberry Jam

This recipe doesn't get as thick as store-bought jam but I like it that way. You can test the consistancy of the jam by putting a dab of it on a cold plate and putting it in the refrigerator for a minute or two. If you can run your finger through it and it stays, it's thick enough. It made a little over two pints.

Tastes like the Christmas punch you can make in your crockpot with apple juice and red hots. The jam wouldn't gel when I halved the recipe; I'm not sure why.

To Die For Blueberry Muffins

I have been making the muffin's recipe I got from Home-Ec class 20 years ago. This recipe is an updated version of that recipe and so much tastier. Bye bye home-ec recipe! The only reason I'm giving this 3 stars is because of the topping...it's way too much. It melts all over the place and creates a big mess and makes the tops of the muffins cave in. Next time, I'll use a lot less topping, cutting the topping by half and using brown sugar like others suggested (I should have taken the advice but I wanted to try the recipe as it was written).

Garlic Croutons

Homemade croutons jazzed up my boring salad. Subtle garlic flavor and very buttery... not as crunchy as the crouton quarry rocks that come in a box. I might add a touch of garlic salt next time to kick up the flavor.
