Cranberry Salad with Grapes

Reviewed: Feb. 16, 2004
My mother used to make this for holidays when I was a child. It's an old favorite. After crushing the cranberries in the blender, she would also add a cup of grated apple instead of the grapes (it tones down the tart cranberry flavor, but grapes would probably do the same).

Vienna Schnitzel

Reviewed: Feb. 16, 2004
I made this for my boyfriend for a Valentine meal. I wasn't sure what to expect but it turned out delicious. I think next time I might cut the pork in smaller pieces before I pound them because they get huge. My boyfriend says they remind him of pork fritters. I fried them in a little bit of oil, not a deep fryer. I think left overs would be good between some bread, as a sandwhich. I'm glad I came across this recipe. I'll definately make it again.

Egg Fried Rice

Reviewed: Feb. 13, 2004
This is a good recipe to have on hand, especially if you make a lot of chinese food. I used real rice (I had to steam it 20 minutes and add another cup of water) so it took longer but it was still very good. I also added another egg and omitted the green beans because I don't like them. Next time, I might add just a little less onion.

Bread Machine Garlic Bread

Reviewed: Feb. 12, 2004
The inside of this bread is soft and the outside is really crispy, almost like french bread. The garlic made my kitchen smell really good. You might need to add more garlic to the recipe to make it more obvious while eating it. I didn't have dry milk, so I just subtracted a tablespoon of water and added regular milk. I then added 1 Tablespoon of potato flakes (because I had used them in the Hawaiin bread that was really good). I don't know if the potato flakes made a difference or not but the bread is really good.

Carnation® Quiche Lorraine

Reviewed: Feb. 9, 2004
When I made this, I really didn't think it could be that good. But it really is. It's super easy too. It doesn't say in the recipe if you are supposed to break up the bacon when you put it in the crust. I did because I thought it looked better.

Bacon Wrapped Water Chestnuts II

Reviewed: Feb. 9, 2004
These were really really good. I didn't have chili sauce so I used 1/3 cup tomato sauce and 2 Tablespoons chili powder (to make my own chili sauce) and they still turned out good! At my next party, I'm making these. You don't even have to fry the bacon before wrapping them over the chestnuts so they're easy. The only problem is you have to use 2 baking sheets and transfer them to get them out of the grease, but who cares.

Easy Peach Crisp II

Reviewed: Feb. 9, 2004
This has a really good flavor. Shortbread with peaches is a good description. It didn't turn golden brown in the 40 minutes so I gave it a few more and then gave up because I didn't want to dry it out or over cook it. This gets 4 stars because it's easy, inexpensive and tastes good.

Instead of almonds I used peanuts. Yum!

Dad's Divinity

Reviewed: Feb. 5, 2004
Use 1 cup of syrup instead of 3/4. Also add 1/4 tsp. salt. I wouldn't bother cooking the syrup in two different stages. Just cook the mixture to 250 degrees. Otherwise, I think it gives it more potential for failure. Don't stir the syrup mixture while it's boiling or it can sugar. Add 1 tsp. vanilla or almond extract at the very end. Doing it this way has made some fantastic divinity. Remember, don't make divinity when it's humid outside or it will flop.

Baked Sweet Potatoes with Raisins and Pecans

Reviewed: Feb. 5, 2004
These reminded me a little of canned yams but better. They aren't too sweet and they are easy to make.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Feb. 4, 2004
Yes, these cookies were delicious. I like cookies that are a soft and a little chewy and they are just that. I didn't have enough chocolate chips so I added 1/2 cup butterscotch chips and some pecans.

Sun-Dried Tomato and Bow Tie Pasta

Reviewed: Feb. 3, 2004
I tried this recipe exactly as described. The flavors were good but it seemed like the recipe turned out too dry. The oil is absorbed in the dried basil and dried tomatoes so their isn't much liquid left to simmer. I think fresh basil would have made a big difference, or prepared pesto from a jar.

Slow Cooker Beef Stew I

Reviewed: Feb. 3, 2004
I liked the meat and potatoes. The gravy gets nice and thick. I'm not sure what gave it the different flavor, maybe it was the worchestershire sauce or paprika. I feel like I need to change something but I don't know what. I ate the left overs for two days so I must have liked it.

Grandpa's Popcorn Balls

Reviewed: Feb. 3, 2004
I agree with the person who said not to cook it to 300 degrees (instead 250). I would have liked the syrup not to be so hard because it makes them difficult to eat. Flavor was good.

Bread Machine Challah I

Reviewed: Feb. 3, 2004
I don't know if I have an appreciation for challah like others do. It's heavier than other breads. It was good, however. I liked the top crust, it was flaky around the edges and it had a nice golden color.

Mango Cashew Salad

Reviewed: Jan. 28, 2004
Because I love mangos, apples and cashews this makes a not bad side salad. Next time I might just use lime juice instead of vinegar. The vinegar makes the cashews lose their crunch after sitting for awhile.

Plum Good Cake

Reviewed: Jan. 27, 2004
This recipe seems weird but the baby food makes this cake really moist and fragrant. I cut it up and froze some pieces to eat later throughout the month....it seems to freeze well. I made frosting out of confectioners sugar, butter, vanilla and a few tablespoons of chopped canned plums or baby food.

Impossible Coconut Pie I

Reviewed: Jan. 27, 2004
This recipe is clever. Somehow some of the ingredients collect at the bottom of the pan and create a soft crust. The coconut floats to the top and turns golden brown. The center is like a vanilla custard. I love this recipe! It's so easy to make!

Chicken Enchiladas II

Reviewed: Jan. 26, 2004
I liked these a lot. They are kind of like Texas King Ranch Casserole except for they use flour instead of corn tortillas and the tortillas are rolled instead of cut into pieces. I might add just a touch more milk on the final step to make them more saucy.

Caramel Crispy Treats II

Reviewed: Jan. 26, 2004
These are very sweet and chocolatey. I can see why a person would bring them to a potluck because they carry well. I still like marshmallow treats better so I'm giving these an average rating.
