Lazy Dazy Cake I

The batter was awesome! I almost burnt the house down broiling the topping though (the cake pan got stuck in the broiler and I had to shut it off and yank the whole broiler shelf out), so keep an eye on it. The topping on my cake was crispy and chewy....I'm not sure if that's how it's supposed to be but it was still surprisingly really good.

Creamy Dill Dip

I needed dip for my vegetables and I was out of ranch dressing. I don't know what Beau Monde dressing is so I just used some cajun seasoning. This is good.

Ooey Goey Cake

Last Halloween, I went to a party and my friend's mother made this. She called it "That" cake because her kids always said, "I want some of that." I have been looking for the recipe and here it is. I also discovered that it is also called Texas Gold Bars. Yummy. Everyone needs to have this recipe in their files.

Italian Bread Using a Bread Machine

This was good but a little heavy. Maybe I didn't let it rise enough the second time although I did wait the specified amount of time. I used it for a roasted vegetable sandwich and it was tasty.

Vanilla Ice Cream IV

My ice cream maker is really small so I had a lot of liquid to contend with and it took twice as long to make; but it was worth it. I'd make it again and either buy a bigger ice cream maker or figure out how to half the batch.

Brown Sugar Meatloaf

I'm not much of a meatloaf fan but I had to try this because of the comments. It was good. I liked the sweetness from the brown sugar. Next time I might cut my onions into smaller chunks and use leaner meat. I wondered are you supposed to dump meatloaf out to serve it or do you cut it in the pan?

These are somewhere between a cookie and a biscuit. Without the frosting, I don't know if I would have liked them as much. They are good with milk or coffee.

Eclairs II

When I was spooning the pastry onto the baking sheet, my boyfriend asked "What are you making? Blobs of yellow goo?" I was a little skeptical at first but I was delighted to see the "blobs" puff to be light, airy cream puffs. These were really good.

Caramelized French Toast

This was pretty easy. My caramel got a little hard so I don't think I appreciate these as much as I would have if the caramel was soft and chewy.

Caramels

These had a good flavor but they were too soft. I'm glad someone mentioned earlier about reviving their caramel by recooking it to 270 degrees because I was thinking that the next time I made this I was going to cook it at a higher temperature. This time I just put it back in the microwave and cooked it for another 4 minutes, stirring every 30 seconds. When it cooled again, it was a little chewier.

Ultimate Twice Baked Potatoes

These are really good. I cheated and I microwaved the potatoes for about 10 minutes and then wrapped them in tin foil for another 10 minutes. Scooping out the potato and mixing the ingredients was easy. Then I just popped them in the oven for 15 minutes and they were done by the time my main course was ready. I think I might use a little less onion next time.

Best Bread Machine Bread

I just threw all the ingredients in and walked away. About 3 hours later I had hot bread waiting. I'm not sure if I'll ever buy store bought bread again. I made french toast out of this and it was wonderful!

Cocoa Cappuccino Mousse

This gets five stars because not only was it easy to make but it was a delight to serve. The mousse turned out thick and creamy with a rich taste. The only recommendation I would make is make sure you cook the syrup slowly or little particles of chocolate end up in the mousse.

Banana Cream Pie I

I have to give this 5 stars. It is fantastic! I have tried making banana cream pies in the past and it has failed every time in one way or another. This one was perfect! The pudding thickened appropriately, the bananas didn't turn brown (you have to make sure they are covered by the pudding), the crust was nice and golden. I couldn't wait to dig in! I used the flour and not the corn starch. I think it tastes better that way.

Cranberry Salad with Grapes

My mother used to make this for holidays when I was a child. It's an old favorite. After crushing the cranberries in the blender, she would also add a cup of grated apple instead of the grapes (it tones down the tart cranberry flavor, but grapes would probably do the same).
