Chicken Chili with Black Beans and Corn

I loved this one! The only thing I would add is some fresh chopped cilantro and a dab of sour cream on top of each serving. Lime zest would be good too to add on top. I also made a sweet cornbread recipe I found on allrecipes to go along with this. I will definitely make again!

Pear Vinaigrette

Meh....I was hoping this would be a really different tasting dressing. The ingredients really looked good to me, that's why I made it. It just tasted like vinegar with mustard in it to me. I wouldn't guess pear at all. I think next time I will increase the pear and only put it 1 tps of mustard.

Grilled Vegetables with Balsamic Vinegar

The balsamic vinegar makes the dish and adds a nice sweetness to everything. Add tablespoon of Chipotle Tabasco sauce for awesome flavor.

Creamy Salmon and Leek Pasta

I used fat-free sour creme instead of the creme fraiche and it turned out great. I just had to thin the sauce with skim milk so it flowed nicely.

Butternut Squash Soup II

The ingredients listed above is a good starter for adding other things to make it your own. I made it as directed but at the end I added 1/4 cup of heavy whipping cream and 1/8 teaspoon of cinnamon. Very GOOD!!!

Fantastic Lemon Butter Fillet

I gave this 3 stars because it was easy but I feel it could use more flavor. I hate lemon pepper so I omitted that part. Maybe that was the missing flavor? Next time I will add some seasoned salt or something, but it was OK for a quick lunch.

Apple Cider Chicken Marinade

Not crazy bout this one. It made the chicken to fruity/acidic tasting. I cooked the chicken on a pan with olive oil. My opinion, if you use this recipe, cook on a grill and not in the kithen! The chicken was very juicy though, which was good!

Thai Green Curry Chicken

This was very good. I hate fish sauce so I left that out and it was still good. I followed the directions as described for the rest. Goes well with Jasmine rice or any other rice!

Spicy Indian Chicken and Mango Curry

Not sure why this has good reviews. This needed SALT! It just didn't work for me, even though all the ingredients in this dish I like. When I'm older and not allowed to eat salt anymore, I will make this again. Just straight up BLAND!

Warm Greek Pita Sandwiches With Turkey and Cucumber-Yogurt Sauce

This is worth making for the sauce alone! I used diced chicken instead of turkey and added about an 1/8 cup of minced mint leaves to the sauce. One of my favorite things to eat!!

Coconut Curry Fish

This was very good. I used green curry paste (you can get it at your local grocery store in the Asian section) instead of using curry powder and it turned out great. I will make this again. I would like to try this with chicken too!

Garden Fresh Tomato Soup

Very good! I used an immersion blender to mix everything up (not a food mill). I took out the cloves BEFORE I blended it! It still had the clove flavor in there which I thought was perfect. I added a couple tablespoons of half and half and dried basil to taste. I will make this again!
