Royal Icing II

I loved the way this icing set up and was still easy to bite through days later!! It was easy to make and tint and set up within hours. It was also very tasty! I will use this every christmas for our cookies!

Oatmeal Chocolate Coconut Chewy

My family loves these! I do substitute pecans for the walnuts, and use a variety of chocolate chips (white, mint, semi-sweet) depending on our mood that day. Otherwise this is perfect just the way it is.

Pico de Gallo

This was very good and simple. I cut the servings down to 3 for myself and my husband thinking we would have too much otherwise, and should have only cut the servings down to 6 as it didn't make as much as I would have thought. I don't think the cumin is really needed in the overall flavor.

Slow Cooker Carnitas

This is a very good and simple way to make carnitas. However I did make a few changes. As many other reviewers have said you will need to dbl the spices for a 4 lb roast. I used a clove of fresh garlic and halved the salt, omit the cinnamon (I used it and the unusual flavor it gives throws this off, will omit next time I make this), I did add a dash of smoked paprika. Also rub the roast the day before and allow it to sit overnight. I did turn it over at the halfway point of cooking as the recipe called for and would recommend not skipping this step. Also the leftovers made great pulled pork sandwiches when thrown into the crockpot with some BBQ sauce the next day.

One-Pot Hamburger Adobo Dinner

Made this last night and it was very good. It's a nice simple one pot meal with a lot of flavor. I did add some extra veg, used ground turkey instead of beef, left out the sugar and jalapeno. The only reason I'm not giving it 5 stars is because my kids would not eat it. However my husband and I really enjoyed it and we will be keeping this recipe for future meals.

Zesty Quinoa Salad

This is a great quinoa side dish! I did however substitute 3/4 cup of diced sun dried tomatoes for the cherry tomatoes. Made it for some family who came into town who know food and they loved it! Made our BBQ dinner a huge success!!

Turkey Sloppy Joes

Wonderful! I have tried several different sloppy joe recipes and this was by far the best yet! I agree if you don't have the salt free ketchup it can be a little salty but I adjusted the amount of ketchup and BBQ sauce I added to make up for it.

Vegetarian Kale Soup

Wonderful soup! Loved it! Will definitely make again. I did however slightly blend the soup (not to the point of pureed) which gave it a better consistency overall while retaining all the flavor. I also left out the cannellini beans.
