Cranberry and Cilantro Quinoa Salad

I made this exactly the way the recipe read, no alterations, and it was so delicious, so oddly delicious! Love the mingling of all the flavors. If you make this, don't leave anything out. Mmmm.

Chinese Chicken Fried Rice II

As is, this was ok. Waayy to much pepper though. I would recommend cutting it in half. It's also missing a little something, maybe ginger and a pinch of salt. We added peas and that made it a bit more of a rounded meal but of course veggies can be served on the side. Will make again, but maybe tweak it a little next time.

Perfect Sesame Chicken

I tweaked this recipe a bit to suit my own taste. As is, I give it 4 stars because it's just way too sweet for me and not quite 'authentic' enough. It's a five with a few simple fixes. I followed the recipe as written except that I used sesame oil for all the oil in the recipe, 1/4 cup brown sugar instead of 1 cup white sugar, and instead of distilled vinegar I used rice vinegar. This was sooooo delicious served with brown rice. My family, even my kids, loved it! Next time I will add in green peppers and onions like the restaurants do.

Homemade Vanilla Pudding

Recipe as written is basically sugar cream pie filling. I cut the sugar in half and it was delicious. Quick and easy.

Clam with Tomato and Rice Soup

I gave this 4 stars because it was a fantastic idea and made a wonderful base for me to change. With the tweaking, my husband and I give it 5 stars. Here is what I changed: 1 cup of rice, white onion instead of red, 10 oz can whole baby clams undrained, 1 cup corn, 1 15oz can tomato sauce, 1 cup milk instead of cream. In addition I also used a half can of diced tomatoes and some crushed red pepper. I also didn't simmer as long. I think clams get rubbery if cooked a long time so I didn't chance it. I just served it when the corn was done which was after about 10 min. Everything else in the recipe I kept the same. Delicious!

Quinoa and Black Beans

This is really good. The only reason I gave 4 stars instead of 5 is that I felt it was missing a little something. I think it would be perfect (5 stars) with the addition of diced tomatoes. I made the recipe as near as possible to the original, except that I used 1 cup quinoa and 2 cups chicken broth (they were out of veg. broth at the store). I did use both cans of beans and it tasted great, not overpowering. Even better the next day with tortilla chips. Love the combination of spices. Nice balance.

Pumpkin Casserole

This is darn good. And lends itself well to substitutions. I did not have evaporated milk so instead I used a can of sweetened condensed milk and just left out the sugar. I didn't realize until just now that the recipe calls for self-rising flour. I used regular ol' unbleached all purpose and it turned out great. Didn't measure out my pumpkin, just used a 15 oz can. I'm betting that you can even sub 1/4 cup applesauce and 1/4 cup oil for the butter and add some more of the traditional pumpkin pie spices if it suits you. A word of advice, it is very delicious but a bit sweet for a side dish. Might want to cut back on the sugar a bit for supper. As is, it's great for breakfast. All three of my kids loved it.

Easy Key Lime Pie I

This is delicious!! My new favorite pie. I never knew I could like something lemony or lime-y without thinking it tastes like dish soap but I was so wrong. This pie is fabulous. Yum!

Cream Peas

I thought these were really good. I like peas and so having them creamed was yummy to me. I didn't have heavy cream so I used half and half and it was just fine. Thanks for the recipe.

Turkey Meat Loaf

Not bad. I'm not a big fan of turkey anything but my family thought this was delicious and even I ate a whole piece. I doubled the recipe and I didn't have any green pepper but it didn't matter, it was still quite tasty. Will make good sandwiches too.

Bolognese Sauce

Yum!! I loved this and so did my family. Except of course my 4 yr old who will not touch anything red. I did make a few changes. I left out the bacon, used a can of diced tomatoes, and a whole 15 oz. can of tomato sauce. I used a little more wine too. This recipe was very delicious. I served it over rigatoni along with breadsticks. I think though if you want 9 servings, you should probably make 1 1/2 times or double the recipe.
