Coconut Poke Cake

This was an easy and delicious cake! Tried it with devil's food mix with 1/2 tspn of coconut extract as suggested by another reviewer, which sort of gives the flavor of a mounds candy bar.

Sweet Potato Apple Scallop

This is a delicious recipe for sweet potatoes, and a nice alternative to the mashed/marshmallow type recipes. The sweet potatoes and apples are a great compliment. The pecan crumble tops it off with the just the right amount of sweet and crunch. The only change I made was to grate fresh orange peel into the pecan and brown sugar topping, as I didn't have orange extract. Very yummy accompaniment to the Thanksgiving turkey.

Pesto Chicken Florentine

Easy and Elegant Pork Tenderloin

I prepared this recipe to take to friends who had a death in the family. I doubled it and saved half for my own family. The pork was delicious and tender. The family who received it was very, very complimentary as well. The only thing I did different from the original recipe was to coat the tenderloins with olive oil and fresh garlic, covered with clear wrap and refrigerated overnight.

Cheesy Spinach Pasta Pie

Tried the Spaghetti Pie II recipe on this site and liked the ease of preparation and good taste. Reminded me of lasange, but easier and quicker to prepare - very nice for weeknight meal. My family enjoys Spinach Lasagne, but because of the prep involved, we don't have it that often. I searched and found this similar spinach "pasta pie" recipe. It was quite good, and of course, easy to prepare. The only thing I did different from the recipe was to add about 1/3 cup parmesan cheese to the spaghetti crust. Enjoyed this dish with a side of fruit salad.

Mexican Rice

Excellent recipe. Because I had an extra can of tomatoes w/chilies, I added that in place of 1/2 of the tomato sauce requirement. Also, did not add saffron. Quite good with the King Ranch Casserole III and some chopped lettuce and tomatoes on the side, and garnishes of guacomole, salse, and sour cream. Thanks, Ginger!
