Chef John's French Fries

I learned this method watching Julia Child on PBS back in the 70's - perfect fries! First cooking at the lower temp is just to cook the potato, then you MUST let cool a bit, then do the second round at the higher temp to actually "fry" them - perfect crispness on the outside, with perfect soft potato inside.

Best Chocolate Chip Cookies

I started baking when I was about 10 years old and this is basically my recipe which I got out of a local church cookbook where I grew up in Iowa.....that was 49 years ago and still my favorite recipe! The only difference was that mine called for 2 tablespoons of water instead of 2 teaspoons....but I frequently don't add the water, especially in humid Florida where I live now. The results are always pretty consistant - depending on baking time - but usually slightly crispy on the outside and chewy in the middle, with wonderfull flavor and an evenly golden brown color
