High Temperature Eye-of-Round Roast
I'm a former vegetarian who still struggles with cooking meat properly. It came out med-well, just like my husband likes. I was thrilled when he cut it and said "perfect" (very rare for him to say that) :) It was perfect tasting, too. I followed the recipe nearly exactly, along with a few reviewer tips such as, I waited until the oven was at 500 degrees for more than 20 min (I roasted my potatoes during this time). I also made sure the roast was fat side up. I marinated it with wisticher sauce, garlic, lots seasonings, S & P, melted 2 tblsp butter into it.
