Seasoned Cornish Hens

Reviewed: Dec. 19, 2013
This was the first time I have ever made Cornish Hens. I followed the recipe to a T and my family loved it! They loved it so much it is now our family tradition to make this every year for our Christmas diner. I served it with corn, classic rice pilaf (recipe by Chef John can be found on this web sight), roll and green bean casserole.

Easy Chili I

Reviewed: Jun. 5, 2013
Delicious!! I have already made this chili recipe twice and my family has loved it each time. The second time I used the chili to make chili dogs. I made the recipe as listed but I doubled it to make sure there was plenty for my families hardy appetite and possibly a few left overs.

Slow Cooker Chicken and Dumplings

Reviewed: May 20, 2013
Love this recipe! Very simple and tastes like you spent all day! I'm new to cooking, never made chicken and dumplings but always wanted to learn how. My grandma's chicken and dumplings were out of this world good but unfortunately I didn't get the recipe from her before she passed. Taste wise this recipe comes soooooo close to grandma's! The only way you can get any closer is if grandma was here to make it herself. My whole family enjoyed this meal. I don't know who was more impressed (them or me) that this turned out so good (since Im not an experienced cook at all) especially on my first try! Thanks so much Janiece! P.S. I did exactly as listed but I also added some cumin, poultry seasoning and used chicken broth instead of water. Also flattened the biscuits like little pancakes then cut them in strips. Yummmy!!

One Bowl Buttercream Frosting

Reviewed: Jan. 13, 2013
Very easy to make and very tasty!! Wanted vanilla so I didnt add the cocoa but will next time. I used mine to ice sugar cookies. When I added the food coloring it made the icing thinner, exactly how I wanted for the cookies. After icing them I let the cookies sit out and just kept checking on them to see if the icing would dry enough for me to be able to stack the cookies. They dried perfectly, (couple of hours later so be sure to plan accordingly, I wasnt in any rush) I put them in a container and took them to the party. They were such a big hit I wished I had made more!! Thank you so much for this recipe, it is one I will be using again and again!! P.S. I also love that you dont have to use shortening like other recipes. I didnt have any shortening, didnt want to go to the store and is healthier withoout it.

Classic Rice Pilaf

Reviewed: Nov. 5, 2012
Chef John hits another homerun with this recipe!! One word to describe it:DELICIOUS Read the recipe, watched the video and did exactly as directed (except for the Saffron; I was able to find Saffron at our local grocery but not willing to pay that price for it. Over $11 for a few pinches, no thanks) Anyway, this recipe was so easy! The hardest part was not peeking at it after taking it out of the oven. As bad as I wanted to, I didnt peek becuase I didnt want to take any chances of failing it. When the long 10 min was over, I took off the foil and waah laa! Flakey, tasty and hard to believe I made that! Went delicious with Margarita marinated Swai fish fillets. I even did a presentation test popping it out of a round container to plate it which worked like a charm! It was cooked all of the way, not clumpy at all and perfect amount of moisture to hold the molded shape. P.S. I also sprayed the baking pan with a no-stick cooking spray before putting the rice in it. Rice didnt stick to the backing pan at all.

Chef John's Buttermilk Biscuits

Reviewed: Nov. 4, 2012
Love this! Watched video and did exactly as listed in recipe. Never made biscuits from scratch until now. I was always so intimidated to even try. However thanks to this recipe, my biscuits turned out excellent even for a beginner! My husband loved them and was just as shocked as I was that they turned out so good since I ACTUALLY made them from scratch! THANK YOU CHEF JOHN for getting me on track to becoming a great cook!!! No more biscuit recipes for me that start with "open can here" or "open box here"
