Cajun Style Blackened Snapper

Tasty and easy to put together, but no need to use 1.5 cups of melted butter. Melt 3/4 of a cup in a shallow bowl or plate and use them to dredge the fish through. Most of it ends up staying on the plate, and there's plenty left to put over the fish whille it cooks.

Easy Southern Biscuits

The texture was very strange - much like a muffin, not much like a biscuit. Additionally, they stuck so badly to the muffin cases that I lost half of each one just trying to get them out.

Heather's Crawfish Etouffee

Very simple to make with only about ten minutes of prep work. I ended up using about 1/2 teaspoon of cayenne, with 1/2 tsp pepper/salt. Delicious, and well received at dinner.
