Jalapeno Pepper Jelly

Reviewed: Jan. 15, 2004
This jelly is wonderful! My sister & I have made 4 batches of it to give to family & friends. Everyone loves it! We made 1 batch without the cayenne pepper to use as strictly a sweet & sour sauce. YUMMY!!!

Italian Meatball Sandwich Casserole

Reviewed: Jul. 9, 2005
This was AWESOME!!! I toasted the bread first, and omitted the water, & the bread wasn't soggy at all!!! I also added a clove of garlic(minced) to the cream cheese mixture. It was a bit too much garlic, but still really good. (& I LOVE garlic, I usually can't get enough!!!)I've already shared this recipe w/ family members who love it too! Thanks for a GREAT recipe!

Cinnamon Honey Butter

Reviewed: Oct. 11, 2004
This is wonderful! The only thing I did different was added more cinnamon & cut back the honey. It was wonderful on homeade dinner rolls & has become a new staple in our house. Thanks for a great recipe!

Meatball Soup

Reviewed: Nov. 15, 2011
Excellent!! I have to admit, I was very skeptical while it was cooking, I kept tasting the broth & it just seemed bland.....we tend to like bold flavors..but the flavors really do come together!!Only thing I did different was to add a chopped onion and used beef broth instead of the bouillon...and a little splash of white wine...would've preferred to use red but didn't have any on hand. Excellent soup, whole family loved it!

One Bowl Brownies

Reviewed: Feb. 2, 2009
Well, i don't think I'll be buying boxed mixes anymore...this recipe is so simple, & so quick-I wanted brownies for the Superbowl & didn't have a mix on hand- this definately did the trick! I absolutely LOVE brownies, and these did not disappoint! Definately put foil in the pan & spray w/ Pam-that way they don't stick. If you're looking for a rich, fudgy brownie, this is it!

Fresh Salsa

Reviewed: Jan. 8, 2009
Great recipe, with a few changes-if you want a more authentic Mexican salsa, leave out the oil, vinegar & cumin-add fresh lime juice & cilantro-you'll think you're in heaven!! Oh, and it's important to us a white onion, not sweet or red. This gets better the longer it sets & serve at room temp.

Jalapeno Popper Spread

Reviewed: Oct. 19, 2008
I took this to a Halloween party & it was a big hit!! I had 2 ladies almost tackle me for the recipe! I added the whole 4 oz can of diced jalapenos, & it honestly could have used a little more!(And I don't even like hot/spicy things!)Definately bake it, & next time I will stir the Parmesan into the mixture. I did as another user suggested & mixed the cheese w/ Panko bread crumbs. It was ok but it made a hard crust on top which I found myself digging under to get to the good, creamy stuff! Also served w/ Crostini & sliced baguette both. The baguette was perfect, the Crostini took a little bit away from the flavor. My new fave dip recipe!

Crabmeat Roll-Ups

Reviewed: Dec. 26, 2007
I wanted to put an Asian twist on these, so I completely left out the cocktail sauce & instead added a couple of dashes of Soy sauce to the cream cheese, added a clove of garlic(pressed) & served w/ Sweet & Sour sauce! You will love this version if you love Crab Rangoon, and it's MUCH healthier! Thanks for a great basic recipe, next time I'll try what the recipe calls for, it sounds delicious either way!

Swiss Chicken Casserole II

Reviewed: Jan. 10, 2011
Wonderful recipe! Only changes I made were to pound the chicken breasts, and use white wine instead of milk. It just gives it something "extra" special. I also combine the melted butter & stuffing before sprinkling on top. My hubby LOVED this! And best of all, it's very cheap to make! A definate "comfort food"!

Cincinnati Chili I

Reviewed: Oct. 16, 2007
I make a very similar chili, with a few changes;1 lb ground beef, 1 lb sausage; 1 can chix broth, 1 can beef broth. Use 1 oz of the chocolate & cut down just a bit on the cinnamon & allspice otherwise it's a little overpowering. I throw in a can of chili beans due to personal taste. You will never make another kind of chili again! It's so rich & wonderful; the longer you simmer the better!

Mexican Rice III

Reviewed: May 25, 2006
This is AWESOME!! The closest recipe I've found to the stuff you get in restaurants. The only thing I did different was sauteed all the veggies & spices in the broth, then a few mins toward the end I added Pre-cooked rice to avoid what other reviews said about under cooked rice. Also added the cilantro at the end too.......it had such a wonderful flavor! Will definately add this to my favorite recipes.

Cola Chicken

Reviewed: Oct. 5, 2007
This is a super easy, quick meal, esp when you don't feel like cooking!! I made a few moderations: I used 1 1/2 cans Diet Pepsi, and 1 1/2 c. ketchup. I also browned some chopped onion & garlic before adding the chicken/sauce. Also added a few dashes of Worcestershire sauce to it. Great flavor! Chicken was super moist!

Classic Macaroni and Cheese

Reviewed: Jul. 11, 2011
This is the way my mom always made mac and cheese, and it's probably my fave...I've made it many ways...and this is by far the easiest & has the least amount of ingredients. Definate "comfort food". I lived on this when I was nursing my 2nd daughter as everything I ate seemed to bother her:)
