Quesadillas on the BBQ

Reviewed: Oct. 17, 2006
Overall these were pretty good but honestly we just prefer the traditional quesadillas, it may be because I used whole wheat tortillas. Sounded good though!

Broccoli Cheese Soup IV

Reviewed: Oct. 17, 2006
This was good, but I expected better-the broccoli didn't get totally cooked so it was crunchy- next time I will either let it thaw or cook it in the microwave first. The cream cheese is very good, it gives it a creamy taste & the onion gave it a little bit of sweetness-I'm sure with a little tweaking to our liking it will be awesome. Thanks for a great basic recipe!

Shrimp and Crab Enchiladas

Reviewed: May 25, 2006
These were really good, I mixed some cream cheese in with the crabmeat & shrimp, & added some fresh garlic. Honestly, I think it would be better without these two additions! I will try again & follow recipe as stated. Overall, very good flavor!

Mexican Rice III

Reviewed: May 25, 2006
This is AWESOME!! The closest recipe I've found to the stuff you get in restaurants. The only thing I did different was sauteed all the veggies & spices in the broth, then a few mins toward the end I added Pre-cooked rice to avoid what other reviews said about under cooked rice. Also added the cilantro at the end too.......it had such a wonderful flavor! Will definately add this to my favorite recipes.

Mushroom Soup Without Cream

Reviewed: May 1, 2006
I guess I must be the oddball here, because my husband & I did not care for this soup. It has everything we love in it, & sounded good, but didn't taste good. Usually soup gets better after it sits overnight in the fridge but it tasted worse! Sorry!

WOW!! These sandwiches were SO awesome, I thought I was eating at a restaurant! Super easy & quick to make, & packed FULL of flavor. I used Whole Wheat buns & they were great! Thanks for an awesome recipe!

Amazing Whole Wheat Pizza Crust

Reviewed: Apr. 12, 2006
This was pretty good, I used all wheat flour which made the crust a little tough.....next time I will add in the white flour! THanks!

Ladyfingers

Reviewed: Feb. 25, 2006
This was an easy, overall good recipe. I didn't care too much for the consistency, if you want "pretty" ladyfingers for something like a trife, they kind of go flat once piping them onto a cookiesheet. But the taste definately is awesome. I used them for tiramisu so they were fine for that. So glad to find a recipe, I live in a small town & you can NOT find ladyfingers within 30 miles! Thank you!

Mocha Ricotta Creme

Reviewed: Dec. 28, 2005
I did not like this at all, the flavor wasn't too bad, but the texture ruined it all. I think I will try the almond or vanilla combo, per other suggestions.

Portobello Pizza

Reviewed: Dec. 28, 2005
This was just okay, but perhaps would be better if I used fresh basil & fresh tomatoes; the recipe in my cookbook called for sun dried tomatoes(Do NOT use them in this recipe!!) & oregano. I will try it w/ the basil & fresh tomatoes instead; also cook for longer than directions state if your Portobellos are thick like mine were. All in all, a good basic recipe with lots of potential!

Oven-Roasted Vegetables

Reviewed: Dec. 28, 2005
This is excellent, with any combo of veggies. I add Rosemary & Thyme to liven up the flavor a bit, and sometimes use Balsamic Vinegar. Yummy!

Clone of a Cinnabon

Reviewed: Dec. 28, 2005
These were great, made them for Christmas morning, I don't quite think they are Cinnabon quality, but they are very very good. I didn't use a bread machine, just my Kitchenaid mixer & it seemed to be fine. I wasn't real crazy about the icing, maybe because I used reduced fat cream cheese. Overall, they were really good.

Caramel Cups

I thought these were just ok. I gave some away & everyone else thought they were fantastic, but to me just ok. Alot of potential though.

Buffalo Chicken Dip

Reviewed: Dec. 17, 2005
WOW! This is awesome! I added some chopped green onion & that really did it! Also cooked & shredded some chicken breast instead of using canned. This is SO much easier than making wings, and has the same flavor. Already have plans to make it for holiday parties!

Asian Spiced Chicken in Wonton Cups with Vanilla Apricot Sauce

Reviewed: Dec. 17, 2005
Made these for a party, and they were somewhat of a hit. I loved them, but not sure everyone else did. THe leftover filling we had made GREAT chicken salad sandwiches. I moistened the filling with mayo & it turned out great! Real easy to make!

Marinated Cheese

Reviewed: Nov. 2, 2005
I am really on the fence on this one, it does make a nice presentation, however, the vinegar is way too overpowering. I was really excited to make this because I've wanted to make it for a long time, but was really disappointed with the taste. The first bite I thought was really bad, then I waited a few days & tried it again & it was ok, so I can't make up my mind...I wouldn't make it for anybody tho....sorry, I was realy disappointed!

Chicken Enchilada Soup III

Reviewed: Nov. 2, 2005
This was excellent! I, like others, could not find "Masa Harina", so I bought something called Maseca......it's what you make corn tortillas out of, and it worked great, it really gave it that authentic Mexican flavor. Next time I will definately use all chicken broth instead of water. It would be great adding a can of tomatoes or green chilies....it's so versatile you can do anything to it! We topped ours with extra shredded cheese & sour cream.......yummy!

Twice Baked Potatoes

Reviewed: Oct. 18, 2005
One word........WOW!! These were awesome!! I didn't have any chives on hand but they were still awesome...I also cut the red pepper in half & they still had a "kick" to them. In my hubby's words.."EXCELLENT!!" Thanks so much for a keeper recipe!

Chicken Chimi in the Oven

Reviewed: Aug. 18, 2005
This was just ok..it would have been better leaving all the spices out..I cut the cinnamon in half per other reviews & it still had way too much of a cinnamon flavor......probably won't make this again.
