Enchiladas Suizas

Reviewed: Oct. 16, 2007
These were good, but didn't have the "wow" factor I was looking for. I used whole wheat tortillas, which worked fine, & I added a chopped jalapeno to the salsa. Definately don't skip frying the tortillas, I think that enhances the flavor. Overall, ok, just not exactly what I was looking for. Thanks tho!!

Pumpkin Cream Cheese Muffins

Reviewed: Oct. 16, 2007
Wow these turned out great!!! You definately need to double the cream cheese mixture & it doesn't matter if it touches the paper. I substituted Pumpkin pie spice for the cinnamon, & that worked out really well. Great recipe. A bit time consuming but worth it!

Cola Chicken

Reviewed: Oct. 5, 2007
This is a super easy, quick meal, esp when you don't feel like cooking!! I made a few moderations: I used 1 1/2 cans Diet Pepsi, and 1 1/2 c. ketchup. I also browned some chopped onion & garlic before adding the chicken/sauce. Also added a few dashes of Worcestershire sauce to it. Great flavor! Chicken was super moist!

Chicken Milano

Reviewed: Sep. 22, 2007
Oh my goodness! Was I eating at a fancy Italian restaurant or my own home?? This was fantastic, by far one of the best recipes on here!! I doubled the sauce, & next time will thicken it a little bit w/ cornstarch. The flavor is amazing, & it really is an easy recipe for as good as it tastes. This is my new "company" recipe!! Thanks a bunch!

This was just ok for me, nothing spectacular. I used more bananas than called for. Was hoping for more of a "wow" factor.

Barbecue Beef for Sandwiches

Reviewed: Aug. 20, 2007
This was wonderful!! And so easy! The only thing I did different was to add 2 cups of beef broth to the roast while roasting, and the meat just fell apart! Also added 1 more TBSP of brown sugar, because I like a sweeter sauce. It is fantastic! Thanks for an awesome recipe!

White Chocolate and Cranberry Cookies

Reviewed: Jul. 9, 2007
These cookies are awesome!! I doubled the recipe, so I added the whole bag of white choc. chips.(About 2 cups)...I would cut down on the cranberries tho, and only had about 3/4 cup per recipe. Overall, great recipe!!!

Grilled Shrimp Scampi

Reviewed: May 6, 2007
This was really good, the only thing I would do different is to maybe cut the lemon juice in half, it was a bit too lemony for us...& the shrimp was a bit dry, maybe I used too small of shrimp. But overall, very good flavor!

Jalapeno Poppers of Champions

Reviewed: May 3, 2007
These were excellent & easy to do. I baked about twice as long as called for to make sure they were cooked all the way (I'm too chicken & was afraid they'd be too hot for me!!) Also used turkey bacon. GREAT recipe!!

Port And Mushroom Sauce Chicken

Reviewed: Apr. 12, 2007
This was awesome! I followed the suggestions of others & flattened the chix breasts, & doubled the sauce. I used a whole package of Baby bella mushrooms & thickened the sauce with a little cornstarch. For such an easy recipe, it really has a "gourmet" taste...like you spent alot of time on it! GREAT recipe!

Awesome Egg Salad with a Kick

Reviewed: Apr. 12, 2007
This is not your mother's egg salad!! This recipe is awesome because it is so versatile, you can add more or less of the ingredients & turn out with a wonderful salad! I used a mixture of yellow mustard & sweet mustard, but I think the Dijon would be even better! I also cooked & crumbled some turkey bacon, that was definately worth it! I think I'll even make this without having leftover Easter eggs to use up!

Gumbo Style Chicken Creole

Reviewed: Mar. 27, 2007
This was really good, with a few changes. First, like alot of others have said, it doesn't take 5 mins for the flour/oil to brown. You should do it over low/medium heat. I also used fresh mushrooms, a red pepper instead of green, and added about 1 cup of chicken broth. I also threw in some smoked sausage & doubled up on the sauce/spices(except for the garlic). I served over brown rice & it was very tasty! It reminds me of one of our fave South Beach diet recipes that also includes Bacon & Shrimp...yummy!!
