Creamy Kielbasa and Potato Soup

This soup is a huge hit with everyone I've ever made it for! I just have a few changes I make-I leave out the celery, use all chicken broth, and smoked sausage instead of kielbasa. I also add some cooked, diced bacon that I saute w/ the onion & smoked sausage. This soup is sooo versatile, that is the great thing about it!

Fresh Salsa

Great recipe, with a few changes-if you want a more authentic Mexican salsa, leave out the oil, vinegar & cumin-add fresh lime juice & cilantro-you'll think you're in heaven!! Oh, and it's important to us a white onion, not sweet or red. This gets better the longer it sets & serve at room temp.

PHILLY Baked Crab Rangoon

These are pretty good, but I would leave out the miracle whip & add a splash of soy sauce. Top with a dollop of sweet & sour sauce & you won't even miss the fried version!

Amish Breakfast Casserole

This was sooo good! Such a nice change from the same ole breakfast casserole I always make! I made this for Christmas Brunch & everyone loved it! It is more of a hash brown casserole than I originally thought, but I loved it anyway! Wouldn't change a thing.

Jalapeno Popper Spread

I took this to a Halloween party & it was a big hit!! I had 2 ladies almost tackle me for the recipe! I added the whole 4 oz can of diced jalapenos, & it honestly could have used a little more!(And I don't even like hot/spicy things!)Definately bake it, & next time I will stir the Parmesan into the mixture. I did as another user suggested & mixed the cheese w/ Panko bread crumbs. It was ok but it made a hard crust on top which I found myself digging under to get to the good, creamy stuff! Also served w/ Crostini & sliced baguette both. The baguette was perfect, the Crostini took a little bit away from the flavor. My new fave dip recipe!

Spaghetti Carbonara II

I've been making this for a few years now & it is an absolute staple in our house....we have it probably twice a month. I use Whole Wheat Spaghetti & Turkey Bacon to make it a little healthier. I also use 6 eggs & 3-4 cloves of garlic. Also a whole bag(8 oz. I think) of Parmesan cheese. YUM!! A big bowl of this spaghetti is all you need!

Tartar Sauce III

I made some fish that didn't taste very good so I got on here to find a quick & easy recipe.....guess what? Now my fish tastes great! Thanks! Didn't have any lemon juice so just left it out & added a touch of sugar

Roasted Vegetables

I have tried roasted veggie recipes & haven't quite found "the one".....until now! I used a red, yellow, & orange bell pepper, onion, mushrooms, a sliced zucchini, a sliced yellow squash....and added 2 T balsamic vinegar to the dressing.......WOW!!! I also sprinkled Parmesan cheese on top to serve. Yum!!!

Whole Wheat Pancakes

Ummm, I'm never buying Pancake mix ever again! It was a super rainy day, (the effects of Hurricane Ike) & I could not get out to the store, & was out of pancake mix, so I used this recipe-didn't have buttermilk, wheat germ or butter(I was out of EVERYTHING!!!) so I subbed Quick cooking outs for wheat germ, canola oil for butter, & made my own "buttermilk" using 1% milk & white vinegar.(1 TBSP per 1 cup milk, let stand 10 minutes) They are awesome! And turn out way sturdier than store bought Whole Wheat pancake mix ! Definately will be using this again & again!!!

Sturdy Whipped Cream Frosting

EXCELLENT!!! I used this to frost my daughter's birthday cake.....I always love something "light" as her birthday is in the summer, this was perfect!!!! My entire family LOVED it! We used the leftovers for fruit dip....so this is now my new frosting recipe & fruit dip recipe! Yummy!!!

Salsa Chicken

WoW!! I had no idea this chicken would have as much flavor as it did! We were pleasantly surprised! I used 5 chix breasts, and rubbed an entire packet of taco seasoning onto it, & used about a half cup more salsa. Also double the cheese(I use 2%). And 2 TBSP of sour cream? i don't think so! That just doesn't cut it! This dish is definately being added to our "regular" recipes! Yummy! And so good for you!!

Spicy Baked Sweet Potato Fries

I make these all the time;however, I only season them with salt & paprika, & use olive oil. Bake for 30 mins at 425;then turn the broiler on for a few mins, that wil crisp them up a bit. Yes they are a pain to cut up into fries, but I use my santoku knife & it's a breeze;definately worth the effort-these are so good you feel like you are cheating!!!

Crabmeat Roll-Ups

I wanted to put an Asian twist on these, so I completely left out the cocktail sauce & instead added a couple of dashes of Soy sauce to the cream cheese, added a clove of garlic(pressed) & served w/ Sweet & Sour sauce! You will love this version if you love Crab Rangoon, and it's MUCH healthier! Thanks for a great basic recipe, next time I'll try what the recipe calls for, it sounds delicious either way!

Easy Decadent Truffles

These were pretty good, I split mine into 4 different kinds; raspberry, orange, coffe, & just chocolate. For the raspberry I cut the recipe in half, and used Raspberry chocolate chips, no flavoring required! Orange I used orange extract, Coffee I used some pretty strong instant coffee. YUM!! I'm still searching for the perfect truffle recipe tho....

Cincinnati Chili I

I make a very similar chili, with a few changes;1 lb ground beef, 1 lb sausage; 1 can chix broth, 1 can beef broth. Use 1 oz of the chocolate & cut down just a bit on the cinnamon & allspice otherwise it's a little overpowering. I throw in a can of chili beans due to personal taste. You will never make another kind of chili again! It's so rich & wonderful; the longer you simmer the better!
