I've been making this for a couple years now & it's always a hit, even with those who don't usually like to eat their veggies. The combination is delicious however I also add some green beans and red bell pepper. I use the whole baby carrots and add them along with the onion first as they take the longest to cook. Green Beans & Bell Pepper next and the squash in last. Seasoned with Mrs. Dash's Garlic & Herb & a pinch of lemon zest then sprinkled with a little Parmesan Cheese right before serving.
I put this combination in quart size freezer bags for later in the year. The frozen combination cooks up tender, no crisp, but just as flavorful & a welcomed reminder of a good summer.
