Chewy Chocolate Chip Oatmeal Cookies

These were pretty good. I halved the recipe, omitted the walnuts and salt, used Smart Balance instead of butter, and added 1/2 a mashed banana. I added a bit more flour and baking soda as per the reviews, but the dough seemed a bit dry and needed to add a tiny bit of (soy) milk to make it more balanced. I had no problems with spreading and baked them a bit longer than suggested since I made large cookies. Actually my favorite part of the recipe is the hint of banana that I added- it's a really nice touch. In fact, I wouldn't make these without the added banana. Overall, I enjoyed them and would make them again.

Blueberry Zucchini Bread

These were fabulous- definitely the best thing I've EVER made! I did use a mix of fresh and frozen blueberries, since I didn't have enough fresh berries on hand. I also substituted about half the sugar for brown sugar, which was an excellent change. Oh, and I only had a full size loaf pan, so I just put the dough in that and baked accordingly. I also added a butter and brown sugar mixture on top afterwards and stuck in the oven on broil for a nice caramelized brown sugar topping. I will make this over and over, because I can't get enough of it!

Chocolate Banana Bread

It was good, nothing special though. I had to bake it longer than suggested, because it was a bit gooey at first.

Pumpkin Chocolate Chip Cookies III

These are pretty good. I halved the recipe due to the amount of the ingredients I had on hand, except then I added a whole egg instead of half for obvious reasons and added a bit more flour to balance the wet and dry ingredients. I realized halfway through mixing everything that the recipe called for baking soda, not just baking powder. So after searching a bit on the internet, I added approximately 3 times the baking powder as the recommended baking soda amount in addition to the baking powder already in the recipe. Despite the changes in chemistry, the cookies are actually really good. There's a bit much of the baking powder taste, but that's obviously my fault. I can tell if I had baked according to the actual recipe, the cookies would be even better. Great taste and texture. [update] I made another halved recipe with all of the correct ingredients and loved them!

Apple Crisp II

This is really good! The prep time took longer than stated (mostly for the apples), but it was worth it. I halved the recipe and used Smart Balance instead of butter; I also used Granny Smith apples- the best for baking! My only complaint is that there is too much sugar in the topping- it's still grainy on the final product. I'd either cut back on the sugar a little or add more oats or something to balance out the topping. Otherwise this is delicious! I think I'll add raisins next time for a little extra something.
