Zucchini Cornbread Casserole

This recipe was very good, similar to a quiche in flavor and texture. Next time I will try addding bacon and spinach to the mix. It would also be good with Monterey Jack cheese. My suggestions would be: use 1/2-3/4 cup diced onion; be sure to squeeze the water from the grated zucchini before adding (perhaps this is why people are getting gooey results?); add all the cheese except 3/4 cup for topping; and finally wait until the last 15 minutes to add the cheese. I also covered this with tin foil until the end so it would not scorch the top. Will make again, it was very easy.

Best Spanish Rice

Rated a five for quick and easy! I added canned corn as well, and it was really tasty. Diced tomatoes would be good too. Thanks!

Salmon Chowder

Hello, I gave this recipe 5 stars after modifying it a bit. Thanks to all those posters before me for their advice! My husband now rates my version of this soup ("smoky salmon chowder") as his favorite soup we've tried thus far! The following changes make a "smoky" version of the original and requires liquid smoke. If you don't like that smoky flavor, you might not want to follow my advice. However, if you do like smoky flavor this is to die for! Use: 1 LB Fresh Salmon smoked on the barbecue; use 3-4 cloves of fresh garlic; omit the carrots; double the dill weed; use only 1 cup of real cheddar cheese; and finally, as the soup is finishing add TWO capfuls of Wright's Liquid Smoke into the soup. Serve with artisan bread and enjoy!!

Slow Cooker Chicken and Dumplings

I love this recipe, although I make a few modifications: I cut the chicken in half (2 breasts) and instead add a cup each of frozen peas and krinkle-cut carrots into the mix. For anyone who loves veggies, it is delicious!! Also, I have found it is worth paying a few extra cents for the slightly higher quality biscuit dough, as the dumplings turn out much more 'fluffy' and soft than when using the cheap brand. Thank you!

Lower Fat Banana Bread I

Delicious recipe! I read other's comments and took some advice: added 1/2cup of chocolate chips, 1/2cup chopped walnuts, an extra banana, plus a healthy shake of CINNAMON, my pic for *special* ingredient! (gave a wonderful hint of flavor to the bread, highly recommended). Thanks for the recipe, will definitely use this again.
