Frog Cupcakes
My frog cupcakes turned out so cute and were a hit. I used the vanilla frosting tinted with green food coloring. I then dipped the frosted cupcake in green sugar I bought from Kroger. Just beware that this will get messy when little kids eat them. My poor niece Hannah's lips, tongue, and teeth were green:)

Easy Slow Cooker French Dip
I read another reader's critical post and I have to agree with them that giving a recipe 5 stars when you've significantly altered the recipe is not a fair assessment of the recipe. I unfortunately did not read the other reviews before making this. I made the recipe as written above and it was not good at all. The meat lacked flavor and was tough. I did slice it up and put it back in the broth to cook for another hour. That did help soften the beef, but still lacked flavor. I will not make this recipe again.

Coconut Tofu Keema
I loved this recipe! It was my first time working with coconut milk, curry powder, and tofu. I read most of the reviews and I think I got it. For 2 people, I reduced the servings to 4. I then used 2 pressed cloves of garlic, 1/2 med onion minced, 3/4 can coconut milk, 3/4 package of tofu diced, 1 small can tomato sauce, 3/4 bag of frozed peas, and one carrot diced. I left the spice measurements as they were calculated. My dish turned out perfect even when simmered for 30 minutes. I ladled it over brown rice. This recipe re-heats really well!!
