I am a happily married mother of four. Almost empty nesters....We are self employed, 12 years in the Reacreational Vehicle Industry, and we also own a Bar and Grill that seats up to 80. I am a very busy girl.
Life is great, love my family and our work family. I could not accomplish what I do without the support of the team of great people I work with.
My children are my life, two are college graduates, one who is my smartest child and is a free spirit, and last but not least the baby who is in High School.
My favorite things to cook
Everything! Right now I'm looking for inspiration from home cooks....great everyday recipes....maybe with a twist.
Favorite, favorite appetizers, they are after all our starter dish. It's great to make a healthy meal from small portions of fun food!
Desserts....I just love everything thing sweet
Also....anything Southern...I grew up with two special women...my grandmothers Ga-Ga and Mi Mi, whew these women could cook.
My favorite family cooking traditions
Southern inspired Holiday dinners. Scratch biscuits..white cornbread dressing, seafood (especially gumbo).
Gumbo is actually served as a meal at our family gatherings, we could pay off a portion of a loan for the price we pay for the pounds of seafood and quantity we make at one time. I have never heard a complaint about Daddy's Gumbo.
My cooking triumphs
My first standing Rib Roast I was so worried. I had no clue how easy that was. A few Christmas parties where I decided to cook everything, was sweating it at the time, but was so excited that I pulled it off.
My first white chocolate and strawberry layer cake! Made for a dear friend....with what I had on hand, turned out better than if I had planned for days.
My cooking tragedies
Oh! Home made biscuits while training staff used All Purpose Flour at the time, did not check ahead of time to see if kitchen was stocked with baking powder ( I love self rising flour).... Needless to say, biscuits were a diaster. It was a really bad day, I learned the hard way before cooking shows, to prep kitchen before starting, instead of assuming all ingredients are available (or on hand).
I tend to fly by the seat of my pants....it usually works but not so that day.
Years and years ago I thought I would cook a turkey in one of those oven bags! You'd had to have been there, it was the moistest turkey ever! Ummmm, yuck
