Brazilian Banana Bread

Reviewed: Oct. 27, 2014
First of all, this is definitely a cake! At least the way mine turned out. Followed the recipe except added one more banana (b/c I wanted to use all I had) and I did the lemon juice trick w/ the bananas. Also added more spices; 1tsp cinnamon & nutmeg, 1/2 tsp allspice & cardamom, & 1/4 tsp cloves. Mine did take some extra take some extra baking time however. But that could be my oven or something I did; don't think it was the recipe's fault. It came out a smidgen dry as a result but nothing a little whipped cream couldn't handle :) next time I think I'll try mixing the bananas in a little or maybe a drizzle of caramel. Hubby wants it w/ apple.

Chantal's New York Cheesecake

Reviewed: Jan. 8, 2014
Made this for Thanksgiving and it was eaten over pumpkin and pecan pie! This cheesecake had perfectly smooth, velvet-like texture. It did come out with a crack on top, even with a water bath, but I don't blame the recipe; that's just the nature of cheesecakes, sometimes they do and sometimes they don't. I topped with warm cinnamon caramel apples just before serving.... awesome! Can't wait to try again with different toppings and add-ins. Thanks!

Fudge Brownies I

Reviewed: Jan. 8, 2014
Just had two of these (couldn't stop @ just one;) after making for the first time. Followed others' advice and used 1 1/2 c sugar, 1 1/2 sticks butter, 2 eggs and 6oz. choc. & about 1oz. of milk choc.(just b/c I had it on hand) I also used whole wheat flour instead of reg. AP flour;b/c I already had it out...so SHHH! No nuts (Hubby doesn't like:( and baked in 7X11 glass pan for 35 min. They turned out yummy! Rich, chewy middle and hard, crusty edges...PERFECT! Might experiment with a little less butter next time, but that's just b/c I can't leave a recipe alone! Thanks for sharing!!!

Belgian Molasses Bread

Reviewed: Dec. 9, 2012
AWESOME bread! This is absolutely the best bread that I've ever made in my bread machine. I've made it twice now (in less than a week) and it came out great both times. My family raved about it; even my picky son who is not normally a big bread eater asked for thirds! I did change just a couple of things b/c I can't seem to leave a recipe alone... I used 1 cup whole wheat flour and 2 cups bread flour and also added 4 tsp. vital wheat gluten. Next time I'm also going to try adding some honey. Thanks for the great recipe!
