Fresh Ginger Cookies
Followed the recipe exactly as written and they came out perfect. On the second batch I baked them for 12 minutes to get them even softer. The only thing I noticed was how much the flavors mellowed after a day. To get that just out of the oven taste I just warmed them in a low oven for a few minutes. They also make a wonderful substitution for graham crackers for a cookie crust. I use just enough melted butter to keep the crumbs together. I have also used them in my peach crisp recipe.

Szechwan Shrimp
This recipe is so tasty and easy to make with ingredients most of us have on hand. After making it several times in a month I started to make the sauce in a pint size mason jar and changing the servings to 16. I'll use half the sauce for one meal and the other half gets used within a day or two for another meal. The sauce goes equally well with chicken or just a mix of veggies. I usually increase the red pepper and add fresh ginger if I have it on hand. We like it spicy!

Mom's Stovetop Pork Ribs
This recipe really offers endless options of flavor combinations as well as choices of proteins. You can use the technique on everything from ribs to chicken. My favorite combination so far is boneless pork loin country style ribs with hard cider, whole grain mustard and a mix of spices. I try to keep the total amount of liquid/sauce to one and a half cups or less. This helps on keeping the cooking time down as well as using a wide pan.
