Easy Broccoli Quiche

Great recipe. My husband, who usually doesn't like quiche or vegetables, liked this. I, too, found that the ingredients didn't fit into one pie shell, so I made 2. I prebaked both store-bought regular shells for 10 min. prior to adding the sauteed veggies. I also used frozen broccoli, and had a little egg/milk mixture leftover. It took 45 minutes to cook the two simoultaneously. Will definately make again.

Incredibly Delicious Italian Cream Cake

Delicious cake - I made it a day ahead of time for my son's second birthday and he loved it. Instead of regular shortening I used Spectrum trans-fat free shortening, and I made 2 layers instead of 3 (once the batter was divided three ways it looked like an impossibly small amount in each pan so I divided it in half instead). Also, the cakes didn't need to bake nearly as long as the recipe indicated, although that might be my oven. I omitted the coconut from the icing and added more half and half. Greasing and flouring the pans is essential. I'm giving it four stars because the texture of the cake was slightly spongy for my taste. Once the cake was frosted and sat in the frig for a day (thank you reviewers!) it was fine.

Spicy Garlic Lime Chicken

Excellent dish. Very easy to make. I prepared it exactly as directed and it's a definate keeper. I served it with brown jasmine rice and green beans. Both my husband (who's not a big fan of chicken) and our 2 year old son loved it.

Pumpkin Apple Streusel Muffins

Delicious! I went ahead and used the whole can of pumpkin instead of just 1C and used 50/50 whole wheat/all-purpose flour. And I added 2 TBS milled flax seed to the recipe. I also subtracted approximately 2TBS of the all purpose flour and added 1TBS wheat germ, 1TBS oat bran, and 1tsp powdered dry milk in it's place to add to the protein and nutrition content (idea from Ruth Yaron's Super Baby Food book). My husband, who usually does not like pumpkin, really liked these muffins. I took them to a friend's house this morning, and she asked for the recipe.

To Die For Blueberry Muffins

Delicious! I added 2 TBS milled flax seed to this recipe. Also, I used 50/50 whole wheat flour/all purpose flour. When I was measuring the all purpose flour I added 1 tsp powdered milk, 1 TBS oat bran, and 1 TBS wheat germ and then topped off the cup with all purpose flour for added nutrition (idea from Ruth Yaron's Super Baby Food book). Thank you so much for sharing this recipe.

The Whole Jar of Peanut Butter Cookies

Terrific cookies. Instead of 2C all purpose flour I used 50/50 whole wheat and all purpose flour, I used both all-natural peanut and almond butter (no sugar added) and I omitted the chopped peanuts. They were chewy, soft, and full of flavor but not too sweet. Thank you so much for sharing this recipe!
