I have a husband and 3 kids under 6! They keep me busy and I love it. I enjoy cooking, boating, gardening and being with family and friends.

I love to be creative in my cooking but like keep things simple too. I cook whatever i have in the pantry or fridge but very rarely cook the same thing twice!

Southen comfort foods that include meat, casseroles, slow cookers, and any kind of potato!!

Kale Krisps
My family loved these...the first time i've used kale and had no idea what to do with it. My kids were skeptical at first but loved them. Be sure the kale evenly distributed (level) and don't skimp on the second batch turned out perfect. Also no need to wait in adding cheese or spray with Pam. Garlic salt and pepper were perfect.

Stuffed Peppers
Just made this and it was wonderful. Made a few changes: browned the beef with diced carrots, green onions and celery and garlic. Added the tomato sauce (prego with mushrooms) and let simmer together while the rice pilaf (near east brand)cooked. Mixed all together with rest of ingredients/spices. Filled the peppers and cooked 1 hr and added cheese topping for another 10 min. My kids loved it. Served with bread and a salad!

Aunt Carol's Spinach and Fish Bake
OMG! So easy and so good. Baked in two separate dishes for kids and parents and was amazing. Kids had cod and we had seabass! Mixed fish topping with breadcrumbs mixture of cheese, salt and pepper and poured melted butter on top. Kids ate every bit and asked for more! YEAH! Husband ususally complains about my fish dishes but loved this one! Keeper!
