A little time consuming with shredding cheese, dicing tomatoes and green onions. I cut the tortillas into quarters and arranged the quarter slice into the muffing pan. A good vegetarian recipe overall.

Antipasto Pasta Salad

I used provolone cheese instead of asiago. A bit pricey, but not a bad recipe. Great for a picnic or party.

Chocolate Angel Food Cake I

When the recipe called for a large bowl for the egg whites and cream of tartar, they meant it. This was my first experience with an angle food cake. I didn't realize that the eggs would triple in size. The cake was absolutely wonderful. There was no need for a frosting. I served with ice cream.

Amanda's Potatoes

While the amount of time spent on carmalizing the onions was cut down drastically, the recipe turned out well with a touch of sweetness added the the taste of the potatoes. Unfortunately it wasn't a big hit with the kids.

Picante Chicken Stew

Great meal for a cold, rainy day. I used leftover potatoes from another recipe called Amanda's Potatoes. It had a hint of sweetness that really added to the recipe. I would make this again. Plus the kids liked it.
