Rosy Rhubarb Salad

Stuffed Pumpkin I

Made this tonight with ground turkey cooked in oil, otherwise the same...delicious! Next time I'll up the spices to better suit our taste. To serve, slice the pumpkin into wedges. Presentation is beautiful.

Cucumber Pan Rolls

These are tasty because of the herbs, but there's nothing 'cucumber-y' about them. I think there are other much better ways to use the cucumbers my garden produces.

Canadian Shortbread 'Eh'

Reading the other reviews, I must have made this wrong. My cookies spread like crazy, which is a shame since we were trying to make decorated sugar cookies. I did double the recipe; perhaps this one's not good for that. They are delicious, however, so I give them a 5 for taste but a 2 otherwise.

We were disappointed by this recipe. The unusual spices made me expect unusual flavors, but it was on the bland side. Could be the cook, certainly, but we weren't impressed enough to try again.

Corn Pudding V

This is nearly the same as a delicious corn pudding we had at a recent Thanksgiving. The only difference: bake for 15 minutes, sprinkle on a cup of grated parmesan and bake another 30 minutes.

Chinese Cabbage Salad II

Delicious, and so simple! I learned how to make a more complicated version of this recipe in a cooking class, and this version is just as tasty and much much easier. Simplify it a bit more by heating the vinegar and sugar in a jar in the microwave. Shake to be sure sugar is dissolved, add remaining ingredients, screw on the lid and shake.

Curried Wild Rice and Squash Soup

P.J.'s Fresh Corn Salad

My family loves this recipe, which has become the base inspiration for many summer salads! It's great for using whatever's fresh in our garden. Zukes, summer squash and red onion work very well. So does using an olive oil/red wine vinegar vinagrette instead of Italian dressing.

Mediterranean Fish Stew

Smells great on the stove, and tastes wonderful! Not your run-of-the-mill flavor combo which makes it a great change of pace. We used sole and salmon, and seasoned salt instead of paprika because I found out too late that I didn't have any. We'll definitely make this again!

Delicious! We used stale tortilla chips rather than frying tortillas, and added them right at the end just before the eggs were fully cooked. No cheese needed--this is tasty as is!

Gram's Chicken Pot Pie

Coconut Chocolate Dream Pie

This pie is easy to make and REALLY yummy. You'd never guess from the taste that it contains tofu and rice milk instead of the usual high-fat cream!

Smoked Gouda Mac and Cheese

Gouda flavor was barely present, sauce was very soupy. This would be tastier with a more aged gouda than the variety available in my grocery. I will not make this again.

Pumpkin Cake III

This cake received rave reviews at a fall birthday party. I used replaced 1 c. up the oil with 1 c. applesauce in the interest of lower fat, and the result was moist and delicious! Easy too!
