Classy Chicken

Reviewed: Feb. 27, 2004
This was really good; a great change for chicken. I was a bit skeptical because I didn't think I was much of a dill fan, but the dill really made this recipe. Excellent. I did add some sliced mushrooms and a few more sun-dried tomatoes, but other than that, stuck to the recipe exactly. Easy and quick! Thanks!

Easy Chicken in Wine Sauce

Reviewed: Feb. 23, 2004
Pretty good! Of course, it would be even better over rice.... I added some sliced mushrooms. And the best thing is that it literally takes 15 minutes.

Baked Orange Roughy Italian-Style

Reviewed: Feb. 16, 2004
I thought this was good; my husband thought it was great. We used much less butter than called for which worked fine. I also soaked the fish in milk for 10 minutes first to get rid of the fishy smell/taste. I only just started cooking fish myself, and this was very easy. Thank you.

Asparagus with Parmesan Crust

Reviewed: Feb. 16, 2004
This was fabulous (and quick and easy!). We didn't even end up adding any balsamic vinegar because the asparagus was so good without it. Thanks!

Pleasant Pork Chops

Reviewed: Feb. 2, 2004
My husband really liked this; I thought it was OK...but definitely one of the better pork chop recipes I've come across. I was ready to give up on them except for grilling! The meat ended up a bit dry, despite the fact that I only let them simmer for 35 minutes, so I will adjust that next time. I'll also probably add a pepperoncini to the sauce to give it some kick. Thanks!

Baked Tilapia in Garlic and Olive Oil

Reviewed: Jan. 30, 2004
First time ever making fish -- this was so easy and good! Only marinated 1 hour and reduced the amount of onion, and it still was a bit too much onion for us. Also added some tomato as someone else recommended which was a great addition. Fish was cooked perfectly which was a huge plus for a first-timer. Will make again with less onion and more tomoato. Thank you!

Greek Chicken Pasta

Reviewed: Jan. 26, 2004
This was great. The only thing I did differently was to add 50% more tomato - and allow the chicken/artichoke/tomato mixture to simmer for 6-8 minutes before tossing in the hot pasta and feta at the very end. That allowed the ingredients to blend more.

Burgundy Pork Tenderloin

Reviewed: Jan. 25, 2004
I was skeptical of the packaged gravy, but this came out great! Wow. I did sear the meat and used some beef broth and less wine, but otherwise, stuck to the recipe.

What did I do wrong? Not awful, but thought this was incredibly bland.
