Delicious Ham and Potato Soup
Delicious indeed. This soup was a hit with every person in my family - from the food-snobbiest adult, to the pickiest child and everyone in between. It's easy and economical to make. I subbed a Leek for the celery, and didn't peel the potatoes. Next time I'll double the recipe as there's no way it would have fed 8 of us for dinner.
*Update Aug 2014 - I've made this six or more times. It remains a favorite, loved by anyone whom I serve. I always double it, and have tripled it when there are guests. Lately, I've been using italian sausage instead of ham and adding corn, which makes it more like a chowder. There are so many ways you can go with this recipe, but I think I prefer the sausage and corn.
