Strawberry Oatmeal Breakfast Smoothie

Very tasty. I used skim milk instead of soy and frozen peaches and melon instead of strawberries. What a wonderful way to get a balanced breakfast with some fiber and complex carbs. Thanks!

Greek Chicken

I halved the recipe and made this using 2 bone-in, skin on chicken breasts. The flavor was delicious and just right. I also added a touch of red wine vinegar, as well as salt and pepper to taste. I really enjoyed that it used fresh herbs, but I think it would work equally well with dried herbs. Thank you for sharing!

Gourmet Chicken Pizza

Nanny's Spaghetti Sauce

Bland. I added some red onion, a can of mushrooms and some basil. Served over fettucine. It just seemed too bland and kind of dull. Not worth the effort.

Chocolate Meringue Cookies

These were too hard to make. I burned a batch, so it's probably not this recipe, but rather my ineptness with meringue. However, I'll just stop trying to make them and buy them at the store.

Taco Casserole

Very good! To give this a veggie boost, I added some canned kernal corn, and for spice, a couple of chopped jalepeno slices. I reduced the cheese as well. This is very good and I will most definitely make again. Thanks.

Italian Spaghetti Sauce with Meatballs

Awesome. I was skeptical about putting the metaballs with the sauce like many others, but this turned out great. I added some oregano to the sauce, left out the bay leaf (didn't have any) and added fresh minced garlic to the meatballs. My dinner guests loved it. Thanks for sharing. This is now in my permanent collection.

Banana Oat Muffins

Nice texture, but bland. Subs: 1/2 cup whole wheat flour in place of 1/2 cup all-purpose & applesauce in place of oil. Those shouldn't have really altered the taste. Next time I may add some nuts and cinnamon.

Easy Pancakes

Excellent basic pancake recipe. I scaled to 1 serving and it was plenty. I also reduced oil and they came out great. Will keep and make again. Next time I may try whole wheat flour or adding fruit/nuts. Much better than my usual boxed pancake mix. Thanks for sharing.

Chocolate Dipping Sauce

I thought that this was okay. My dinner guest, however, commented that it tasted like chocolate pudding. Next time, I'll go with a sauce that has real chocolate in it.

I thought this lacked substance, probably because there is not fat in it whatsoever. Next time, I may use different types of beans and different vegetables. My sister, who is vegan, loved it.

Slow Cooker Chicken Parisienne

So easy! I used frozen chicken breast that I didn't bother to thaw. I followed advice and turned heat on high for last hour with top off to cook off alcohol. Next time I will use lots and lots of fresh mushrooms, garlic & maybe onion. Served over whole wheat spaghetti.

Made this again, this time actually following the recipe and adding raisins. They are amazing. Next time I may cut sugar slightly, but this is my new favorite oatmeal cookie recipe.

Apple Stick Salad

Tomato Curry Chicken

Pretty good. I didn't have onion, basil or parmesan cheese. I substituted onion flakes, dried coriander & left out the cheese and butter. Also, I added a tiny bit of honey. I would've given this 3 stars for taste but I'm going with 4 for ease of preparation. I will definitely make again.

Can't Tell They're Low-fat Brownies

These are very good for a low-fat brownie. On suggestion I used 7 TBL cocoa powder & applesaunce. Also, I doubled the recipe since I didn't have an 8 X 8" pan, and since I did not have anymore applesauce, I used 1/2 cup of fat free sour cream. Pretty good. Thanks!
