This is SO good! The whole family loved it, even my son who doesn't like veggies. I sauteed the chicken about 20 minutes until it was almost shredded in texture. I followed VBHOKIE's advice and bought the frozen onions, red, yellow and green bell peppers which was MUCH cheaper than buying fresh, and saved tons of time, also omitted the mushrooms. The flavor was great! I used a bit more salt, cajun seasoning (Tony's), and basil and tasted the sauce until it was where I want it. I also added the parmesan cheese (a little more than called for) while the sauce was simmering which helped it thicken. Also added fresh chopped green onions on the individual plates (I like them crispy not cooked). I will be making this over and over again! Thanks for this recipe Tammy!! This was way better than this dish I order at restaurants! :)
