Lemon Chewy Crisps

Quinoa and Black Beans

Wonderful! This was my first crack at quinoa and I'm hooked. I made the recipe as stated then chilled it a bit before adding a little chopped avocado. Just....WOW! I will have lots of leftovers to enjoy over the next few days..........

Green Olive Chicken II

Loved it! The green olives are just a treat in this chicken and rice dish. I portioned this out into individual portions and froze them for later consumption. Freezes beautifully and makes a great, quick lunch. I will make this again!

Black Bean and Corn Salad II

This is a fabulous salad! I made it this morning and I've devoured about 1/2 of the bowl! I used lemon juice instead of lime, cut the oil in half, and mixed 1/2 black beans and 1/2 black-eyed peas. I will definitely make this again.
