Spinach Stuffed Chicken Breasts

I was a bit leary to try this recipe at first because so many people had made changes, but I decided to use it as an outline with "suggestions" and the end result was delicious! I real keeper. Here are the changes I made: added more feta, left out the bacon, subbed one egg for the mayo, added salt, and pepper. Yummy! (ps - I'm sure the bacon would be amazing, but this way is healthier and I didn't have bacon on hand anyway).

Vegetarian Four Cheese Lasagna

Delicious! Everyone loved it. I forgot to cut the tomatoes into slices (as suggested by another member) and will do that next time. I ended up having to cut them after baking, because otherwise they were just too big. Someone suggested I steam the eggplant first, so I peeled it (we've discovered we don't like the skin), sliced it, and steamed it for about 5 minutes before frying. I don't know if it made a difference, but it certainly didn't hurt! I also bought the wrong size feta container, but it still seemed to be plenty and didn't affect the taste. One thing I noticed was that I thought there wasn't enough liquid/filling/cheese, and was worried about the outcome. Nothing to worry about though, the liquid from the veggies made the consistency perfect. Will definitely make again!

Broccoli Chicken Casserole I

Amazing as always! This has been my go-to recipe for years. Last night it saved me again. I had a group of friends coming over and no time to cook. This is super easy and always a hit. Pair with a salad and garlic bread for a little extra. The recipe is great as is, but over the years I've learned a couple things. 1. Use two cans of soup and milk instead of mayo. I forgot the extra can last night. I usually add extra broc and couldn't do it bc not enough sauce. Still excellent. 2. If you have time, pan fry or grill the chicken. It gives much better flavor than boiling (although no one ever complained when all I did was boil). One time I even bought precooked chicken (like the salad kind) and it was great. 3. If you prepare ahead and refrigerate (which is a big time saver, not that this takes long to begin with) you'll need to bake for 1.5 hours to get it to temp. It takes longer to cook, but it's great to get home from work and just pop it in the oven. Good Luck! Your guests will enjoy. Mine always do :)

Broccoli with Garlic Butter and Cashews

This was so good!! I needed a quick veggie side dish for a dinner with friends. Everyone loved it. I made the recipe exactly as called for, except I added 1 zucchini, 1 squash, and some onions. I'm lazy, so I bought a bag of fresh broccoli instead of an entire head that I would have to cut up :) Next time I want to try substituting olive oil or a lighter buttery option (eg. smart start) instead of the butter. Also, I think this would make a great base for a stir fry - maybe add some tofu and chicken, pour it over rice ... yummy!
