Sicilian Ricotta Cheesecake

As a diabetic, I'm always looking for desserts I can actually eat and enjoy. For this recipe, I substituted 1 cup of Splenda for the sugar, Soy flour for regular flour, and used a good quality fat free ricotta cheese. I served fresh berry mix sweetened with Splenda over the top of each serving. A+++++

Bodacious Broccoli Salad

This recipe is definitely a keeper! My husband and I just love it. The only thing I changed was to substitute Splenda for the sugar.

Festive Fruitcake II

To me, this is a ringer for Claxton's brand! For the fruit I used 8 oz pineapple, 8 oz cherries and 8 oz classic mixed candied fruit. I also added walnuts. I split it between 4 prepared loaf pans and pressed down to fill the corners. Baked for about 50 min. Delightful!
