Excellent! I used chopped apricots and dried cranberries in place of the raisins, and a combination of sunflower and flax seeds. This recipe also halves easily (in case you've only got one 9x9 pan like I do!).

Grilled Shrimp Tacos With Pineapple Salsa

The pineapple salsa adds a stand-out flavour, and these tacos are just as good with grilled chicken as they are with shrimp! The only change I made was to omit the reserved pineapple juice - the consistency of the salsa was just right without it. Easy to make and now a regular fixture on my weekly menus.

Spicy Grilled Shrimp

A great addition to my BBQ repertoire. I go a bit easy on the salt, though. I'm sure this recipe would taste just as good with chicken as it does with shrimp.

Black Bean and Corn Salad II

Great flavour! For the dressing, I cut back on the oil and added an extra 1/8 of a teaspoon of cumin. For the salad, I used corn on the cob that I'd roasted on the barbeque. It tasted even better the following day, but next time I make this I'll probably add the avocado to each serving individually - it went brown in the fridge overnight.

Green Salad with Cranberry Vinaigrette

Great combination of flavours! I can't understand earlier reviewers who were putting SUGAR, of all things, into the dressing - there is absolutely no need; it's perfectly tangy as it is. Dried cranberries or "craisins" work well when sprinkled in the salad itself.

Southwestern Roasted Corn Salad

Very tangy - and colourful, too! I make this as a salad with a base of arugula and baby endive, using the bell peppers, onion, and corn as more of a garnish. Yellow bell pepper is a great addition, too.

Potato Chips

Like other commenters, I was skeptical at first (how can potatoes crisp in in a microwave?), but wow! I'd love to make these for a party, but I'd probably eat them before they could make it out of the kitchen! A tip for those of you who don't have a mandolin: a vegetable peeler works just as well, as long as you've got steady hand control.

I'm giving this three stars because the vegetable mix is excellent - colourful and tasty. However, I didn't care for the dressing. It seemed too rich and creamy, and some of the flavours (ginger, garlic) disappeared entirely.

Mocha Nut Butter Balls

This recipe has been a perennial Christmas favourite in my family for years - what a surprise to find it on this site. The only thing we do differently is to dissolve 2 tsp of instant coffee into 1 tbsp of hot water prior to adding it to the butter mixture (rather than adding 2 tbsp of instant coffee to the dry ingredients). Either way, give it a try - you won't be disappointed!

Barbequed Ribs

Fabulous! I initially thought the rub would be too spicy and the sauce would have too much vinegar, but that wasn't the case at all. Here's what I did: I used the rub on raw T-bone steaks and refrigerated them overnight. I then made the sauce, adding a shot of Tabasco and a drizzle of honey, in which I briefly marinated the steaks. After 10 minutes on the BBQ, they were perfect! Can't wait to make these again, this time for guests.

This is an enjoyable and flexible recipe. One tip: when simmering the chicken in the vinegar/lime juice mixture, add the green onions at the very end and sautee quickly to retain their colour and crunchiness.

Spiced Sweet Roasted Red Pepper Hummus

Absolutely wonderful! A fantastic combination of flavours and just the right amount of spice. The colour is attractive, too - perfect for a party. If the consistency is too thick, try adding some of the liquid from either the can of garbanzo beans or the jar of red peppers.

Poppy Seed and Banana Muffins

Excellent! Crunchy on the top, moist in the middle. The combination of banana, poppy seeds, and honey is wonderful. Keep an eye on these if you have a fan-forced oven and Teflon bakeware, though. Even if you don't use the fan-bake setting, these muffins will probably be done in under 20 minutes.

Mexican Bean Salad

A great meal to make in advance and eat later - the "chilling" step is essential if you want the flavours to properly blend. A few changes: I substituted chickpeas for the cannellini beans, sliced my red onion into thin rings instead of chopped pieces, and halved the dressing. I also reduced the quantity of sugar to 1/4 teaspoon because I prefer my salad dressings tart.
